Thank you for watching my pollo asado al carbon video. This pollo asado was cooked on my Yoder Flattop charcoal grill over Jealous Devil lump charcoal (carbon). The seasonings I used from PS Seasoning are a must try for pollo asado. Oh and that char you see is nothing but flavor and as I mentioned in the video, If you invite me over for a bbq, the chicken better have some char. :)

Those pickled onions go very well with sliced habanero pieces. real good stuff. thank you for the recipe. definitely learned a thing or two here with grilling!

It's pretty simple. Slice red onion lengthwise so it's in thin strips, and pack it into a mason jar. For the brine mix water and your choice of vinegar 50/50 with a generous pinch of salt. Sugar is an option too. Bring that to a boil then pour it into your jar of onions and close it up. Any number of herbs & spices can be added. It's all up to you. I tend to go with a few garlic cloves and a tbsp of pepper corns. Anyway, stick the jar in the fridge once it's cool. It's a delicious condiment for all sorts of things, so I've always got a jar of them in my fridge.

That's money dude!! I have Weber Summit Charcoal grill and I like to start the cook indirectly until the internal temp is about 155 and then I remove my deflector plate to let the charcoal finish it off directly to get that char on the under carriage. Muy chévere tu técnica!!

Oh my, looks excellent I will have to try this. I made some of your rub and used it on briskets, I am told they were delicious. Today I used the rub on pork butts, there are still 4-5 hours left on them. I would imagine they will get great too

I am inviting you to my backyard and I swear the chicken will have a char lol. Last year I bought an outdoor wood fired pizza oven. I have cooked chicken wings a few times and believe me they come out almost fried. Oh the pizza I make in it is amazing. Just discovered your channel and love it. I will be making your chili rellenos sausage this weekend. I can't wait!
