Come to the Samoan Village where our good friend, Fune, preps his outdoor kitchen. Then see Executive Chef Felix Tai stop by to try out his famous “hot rock sauce,” which he makes by pouring freshly squeezed coconut milk and brown sugar directly onto glowing hot stones pulled from a roaring fire. Chef Felix then takes a turn cooking with this unique stove, searing fresh Kona kampachi over the red-hot rocks before adding his own twist to Fune’s sweet and earthy sauce with a blend of South-East Asian herbs and spices.

When I was younger, my father used to wake me up very early in the morning on Sundays to get the umu ready. I was more of like a helper, while my uncles and older cousins were doing everything. Still remember peeling the fa’i, scraping the taro, tearing the husks off coconuts and grating them, heating the rocks, get sasa with the supelu… Miss those days 😂

So just as we were watching Fune mastefully show us traditional Samoan sauce, Felix barges in with a bunch of fusion ingredients so he can promote himself. Disrespectful.

"You don't use the skin? What a waste". I know it's probably part of the act, but it does show the difference between a man who has been out fishing and knows how much work it is and wants to make the most of everything he got, vs a man who calls a supplier and gets a box of fish delivered. In the west we live in the pure luxury that we van afford to choose only the "best bits" of animal to eat. Remember the privilege you have and enjoy it.

❤❤❤ That looks soo good! We only got to taste the Poi, the Green Banana with coconut last week tour at Polynesian Cultural center with ka o'hana. And the foods ar the Buffet before we went to the show of Ha: Breath of Life.❤❤❤ what a moment of experienced. I love this culture and its foods & delights food tasting!. Mahalo 🤙Oahu, Hawaii!❤🌺

he got the coconut meat out then grabbed the fibers of the coconut and made a bundle then put the stuff inside and folded it over and squeezed it
