This year because of COVID it’s just my husband and myself. So we decided to have a Mexican posada. We joined your group to help the restaurant folks. I am also restaurant folk! And I’m making the ponche. It’s such a fun ritual. And we are so fortunate to have a Mexican grocery close by. We live in memphis. We are big fans. The menu includes and this is over several days. Fish tacos, chorizo bean dip. Flour tortillas for carnitas burritos. The pork shoulder is smoking today. We love your tortillas for quesadillas and breakfast burritos as well. It’s full on. And to finish it off I’m diving into the bunuelos recipe. You are right the grocery has all the ingredients. What a fun adventure. Thank you for all you share. For taking care of your employees in a creative and fun way. We ❤️you. Feliz Navidad!!!🎄🙏❄️☃️🥰

I prefer fresh fruit. You will find everything on a Mexican market... Specially the sugar cane, they peel it and cut it for you! I love ponche de frutas on Christmas Eve and on Christmas day!

I was intrigued/inspired to make ponche after seeing tecojote and sugar cane at the mercado about 5 years ago. We all agreed that it was much more delicious than we could have imagined. It’s a wonderful tradition (and my dog’s nickname 🐕).

I've never had this outside of Mexico, or even knew everything that was in it. Those who make it best guard their secret, much like some people do here with chili recipes. I agree about not adding tequila, its flavor won't blend in. I've also seen my aunts and uncles put brandy in it. I'll be making some this weekend. Thanks Chef

We had ponche on Christmas Eve, its so good and keeps you warm and cozy. My mother doesn't use Jamaica, I need to ask her about this. She also adds oranges to her ponce with the other fruits as well. I guess its like a regional thing, different parts of Mexico have different versions. Regardless how you make you it, the piquete is always a great addition!

Hi Rick, we the mexicans that grew up with grandparents that have seen cook all this delish dishes, at least I have never seen my grandparents take the seeds of the tamarid we just give them tamarind a rinse and add it to the boiling water we are aware that theres seeds and we really don't eat the tamarind and the guavas we just cut um by halfs and thats all and we do leave the seeds in thats the way it's done in my house.

I always put the guava pulp into the first part of the punch, with the flor de Jamaica and tamarind. It adds a lot of flavor, and then it gets strained out.

For the piquete -I’d recommend a brandy like Torres or Don Pedro. There’s a smooth sweetness added to the ponche😊
