Seem enthusiasm cooks are arguing & scolding one another instead of helping. If we are smart, we won't be following the cook's recipe. @Gost731 idiot! If I bought a frying flour from shop why show it to others? Similar to show people how to cook curry chicken n using canned curry chicken! If u want to show people how to fry crispy prawns then u should show people the secret of the flour... What ingredients in it to make the fried prawns crispy! Not buy the ready mixed flour from shop! It is really frustrating when the chief ingredients that bear upon the crispy crunchy outcome are kept away in secrecy. It stands to reason that you can't wrestle much from the traditional chinese cooks who love tempting you with delicious dishes and holding you in awe of their so-called secret recipes. Anyway, the science of the nature of different flour types has long unveiled the mystery of their cooking myths. You simply need to temper with the ratios of rice flour and corn or potato starch for the extra crispness as well as adding a little baking powder for its puffiness and cold icy water to mix all well. Plain flour will give a soft texture, definitely not too ideal for fried foods.
