Hi, my room temperature is about 31c, must I leave the poolish at room temperature for 3hrs before refrigerated? How long should I leave it in the fridge? Can I use it directly the next day since it is quite hot here?

Sorry for this delayed response. If you room temperature is too high 31c, you don’t need leave the poolish at room temperature for 3 hrs . Watch the poolish see if it already have gas hole on surface (For 31 c may just take 30mins )Then you can put into the fridge right away. You can use it next day no problem.Maximum keep in fridge for 48 hrs.

According to the ingredients on the bag. Contains 4 grams of protein per 30 grams serving. Contains 13 grams of protein per 100 grams
