The addition of hot water to flour as a starting step is definitely an Asian technique. As a matter of fact, in my baking studies the only time I used hot water to create a dough was to make eclairs or pâté choux. The Asian techniques are far superior to my Western education. It's actually an old European method of bread making called scalding.
Thank you for the great vidWeo. The addition of hot water to the loaf is very interesting. It makes sense that essentially cooking the bran to soften makes the bread more palatable. I make many of your recipes, and I will try this.

Thank you for another brilliant recipe! As I live in a hot and humid climate (Singapore), I usually reduce the liquid by around 10%. I use COLD ingredients due to the hot climate. If I use warm water, the dough will rise too quickly and fail. I use my oven to proof the bread dough at around 35degC for 30-40mins.

Yay I made it. Came out just like yours. Taste so good. But I’ve since substituted whole wheat with dark rye as a poolish starter left overnight in the fridge. Came out even better. Unfortunately it didn’t last longer than a day. I ate them all. 😂
