One year when my son was small was really broke on his b day. I made tuna salad and egg salad, put in containers. Baked some chocolate chip cookies. Made koolaid. Packed it all up in our picnic basket along with some apples, Took him to a beautiful national park went on a hike and enjoyed our picnic. Years later if i ask him what he wants me to make for a b day meal he asks for that same picnic now as an adult Poor man meals doesnt mean dreary. You showcase how good cheer and your love transforms your families daily bread. God is good!

Aww hun that’s a sweet story gave me chills. One year when my daughter was little I had to have a hysterectomy and we were broke ex hardly ever worked I always worked and the time off from work was rough. Anyway I had put some things in lay away for Christmas and I had planned on getting her more but bc of being off work that wasn’t possible so with my last paycheck I was able to get her toys out lay away and to this day she said that was the best Christmas!!! She remembers everything she got that year!!!❤

When I was first married, one of my go to meals was browned hamburger meat, mixed with rice, canned tomatoes, and a *lot* of garlic powder. Top with cheese, of course. Delicious! Mmmm, I should make that again :)

The light green will NOT hurt you. It's from the light. You need to keep them in a COOL DARK place. If it's really dark green like not ripe green do not eat that. Being from Idaho "the tater state" and working in the potatoes from the field on the combine-which digs them, to the pit-the spud cellar, to the potato processing plant-which is where they bag or box them up and ship them out to the stores. Just a bit of info for those that don't know. Not being a know it all. Looks yummy Brooke!! Sometimes the stuff you throw together is the best!!

People go out to sit down restaurants and fast food places and spend a fortune because they don't want too, they don't like too or don't know how to cook. These recipes feeds a family of 5 for a few dollars and are so easy & quick to make. Thank you for sharing these recipes.

We have done that potato casserole with cut up hot dogs instead of ground beef. The kids liked that as well.

Most of the vitamins and nutrients are right under the skin so I like to get Yukon gold and leave the skin on, I just scrub them and trim

Thank you for recipes like this. I have a friend who is very low income but also needs very simple recipes because of a nervous condition that makes cooking difficult. I share a lot of your ideas with her. It’s so helpful because I want to help her but I’m not imaginative enough to come up with ideas like this.❤

When I was a kid, we made a similar hamburger and potatoes casserole. But instead of kidney beans, we used a can of pork and beans. The maple flavor beans from Aldi are great.

I loved it when you referred to plastic cheese! When I was a little kid (decades ago), my grandmother kept powdered milk in the house and made it whenever she didn’t have bottled milk. My grandfather referred to the powdered milk product as “plastic milk” when he had it with cold cereal.

I just mixed this up using two cups instant brown rice, two cups of water, one pound cooked ground turkey, two cans cream of mushroom soup, chopped up two fresh carrots, drained a jar of mushrooms, drained a can of corn, and drained a can of diced tomatoes. Topped with Mexican style cheese. In the oven now! Can't wait ❤❤❤

My "poor man" favorite meal is a pot of pinto beans and homemade cornbread, with a fresh slice of Vidalia onion. I grew up eating this "a lot" and at 86 still LOVE EATING it often !

Brooke, these look very good! The potato poor man could be easily be turned into a Mexican type flavor as well. Here is something my best friend and I used to eat back in the 60’s. We boiled some macaroni, drained it when done, then pour a can of cream of chicken soup over the noodles and mix. Of course we used salted and peppered as needed but I think the soup might have enough salt. We never did this but you could put some extra chicken in it or a small can of children. My siblings found they loved this as well. Take care, my dear.

I get a kick out of these being poorman meals. Seems fit for a king. And cooking like this allows us to put a little money by at a time and that adds up. You are teaching life skills to your kids and to all your of us. Grateful for you and your inspiration

Thank you for sharing your nostalgia and creativity. The potato casserole had all the makings of a “fancy” chili topped baked potato. I would have never thought of making this a casserole but I love it. I had no ideas the chili beans had so much nice sauce. Does it taste the same as “canned chili”? Rice casserole is a winner too. I once ran out of cream of whatever soup and also milk and butter so could not make own but subbed in some jarred alfredo. My veggies on hand were onions green pepper and tomato diced. The meat that time was chicken. Everyone loved it.

I have a spaghetti a jar of spaghetti sauce and a package of hot dogs. Flavorings that you like or have on hand. I save all my left over pasta in a plastic bag. This means that it is easy to make the casserole. Good old meal from days gone by. Enjoyed Your old time meals.

Brooke, you took me back today. Growing up my mom made “slumgullion” (have no idea where the name came from. Ground beef, onions, garlic salt and red kidney beans. When I grew up I added chili style beans. Mom said I made it fancy. With roommates we made rice casserole- tuna rice casserole with canned peas and cream of mushroom soup and topped with crushed potato chips, once with a few days before grocery shopping we made - not tuna casserole- canned chicken, canned corn, cream of chicken soup and topped with crushed Fritos. It was alway not tuna casserole. Thank you for bringing some of out childhood to us. Hugs

My Gram made us the tuna and rice casserole over 60 years ago as kids. She wouldn't have used potato chips to make the crunch on top. I think it was something like rice crispy cereal. I know a lot of people who made the casserole with those canned dried onions for the crispiness.

that 1st one, my family (northern midwest) calls that "hamburger mush". the basic ing. was meat, beans, and potatoes; then add to or rearrange as budget or pantry allows. i used pork and beans when kids were little as they hated kidney beans for a while. i'm def. gonna try this casserole variation with cheese - looks yummy!

2nd video: using instant rice is more expensive than using plain rice; costs of canned soup can be cut in half by making homemade; using fresh vegetables rather than precut/pre-packaged crudite is less expensive.

Thanks for memories like this! 😀. In South Dakota my mom fed all seven of us kids with variations of these two types of casseroles- usually with chicken or hamburger, but many times (especially with the rice versión) she used canned Tuna. Tasty! Thank again 😀

I think you are wonderful, there are a lot of people who are newly struggling and you are showing them it’s nothing to be ashamed of and teaching them how to cook on a strict budget. That a lot of it is creativity. Also picking up older bread and making croutons to pop in soups. A bit of garlic powder, oil and salt and you’ve got a great addition to soups. Love your videos!!

Love your videos & seeing how your sweet guys react is priceless. Here in Southern California, hamburger is $5-6/lb. Yikes! It was funny to me to hear that you didn't know there was "real" rice growing up. I never knew there was instant rice until I was an adult looking for recipes to feed my family. I still have to say, at 64, I have never bought instant rice...

Mom & dad grew up during the great depression. Mom could peel a potato so thin,but she would agree with the green part.

Had some left over rice and some left over chili. Homemade chili with gr beef. The whole shot... layered a sm amt of chili to thr pan or in my case bowl. . Then i layered rice on top. I had some left over butter. Lol this is all left overs. I put pats of butter in different places into the rice so l'd have buttered rice... then i put the rest of the chili on top. Scraped the container so i got every last little bit of sauce . Had a small kinda drying chunk of swiss cheese. I cut it up very small. Placed pieces so every bit had covered the top of chile. You can bake or microwave. Looked very apitizing when done. I ate this by dunked in spoon so i could have my rice being buttered and have some cheesy chili all at the same time. It was memorable and will make it again
