Yor's homemade stew from "Spy x Family"

We recreated Yor Forger's Southern stew that appears in "SPY x FAMILY" volume 5. I tried to make two versions: the version that Yor worked hard on by herself and the version that her mother made, which she remembers.
There is a scene in the book where paprika powder is used, so I took a hint from the Hungarian dish goulash.
There are many variations of goulash in Eastern and Central Europe, and Austria seems to have a version with a fried egg on top (called Herrengulasch or Fiakergulasch), as depicted in the story.
Ingredients
300 g veal (if not available, stew beef or pork can be used)
1 onion
2 tomatoes
1/2 carrot
1/3 celery
5-6 mushrooms
1 clove garlic
4 sausages
2 tablespoons paprika powder
1/2 teaspoon marjoram
1/2 teaspoon caraway seed
1 consommé cube (dissolved in 300-400 cc water)
1 tablespoon tomato paste
1.5 tablespoons sour cream
1 tablespoon sour cream 1.5 tablespoons olive oil
Salt and pepper to taste
