Well the only reason why popcorn kernels sink in water because the kernels have a weight, but the sparkling water has baking soda, which has carbon dioxide, which makes the sparkling water have so much bubbles. So the bubbles will attach onto the kernels.

I might be wrong but I think if we put an air tight lid on top of the glass , the vapour pressure of the dissolved carbon dioxide and the vapour pressure of air left in the tiny space between the lid and the surface would, at some point come into equilibrium and we can observe this phenomenon infinitely theoretically...... but as we know no lid is completely air tight , this phenomenon would obviously end at some point but hey u have increased the lifetime of ur kernel lava lamp🤭🤭🤭
