Great recipe! We have a deer farm around the corner (Münster Hof in Ellrhoop, Germany). They used to sell bones (not on the official list) for 3€ a kilo. I once made a jus from that. A gamechanger!

Now that looks delicious. Is there a reason why don't you deglaze the pan you cooked the turkey in with a bit of brandy as well - to get all the flavour off into the gravy? Merry Christmas!

I can't help but comment. I so laughed when you were handling the giblits. I do the same technique roasting off wings and veg and I add the giblits, touching them as little as possible. Yeah, I would never be able to eat them on their own, but they do add flavour to the gravy.

Oh the joys of cooking Christmas dinner without the cooker. 😂. Sous vide turkey, beef, gammon, following up with the air fryer spuds. Tempted to light the BBQ to cook it but would probably be frowned upon in winter. . Happy Christmas to you all

Chicken Bistro best is great but I do make it with less water add chicken bits from the pan and top it with some veggie water, in a pan on the hob. So quick and easy!

I use an Instant Pot on Slow Cooker Low setting and let it run for 18 hours or so to get all the flavor out.

I use my Instant Pot on the pressure cooker setting. I prefer to use an entire chicken carcass and as many air-fried wings as I can squeeze in. I also allow them to cool a bit so I can pull them apart to expose the tendons. And then I pressure cook it for three hours on high before straining and reducing by 75%.

Nice gravy recipe! I usually cut the turkey wings off day before and roast them with the neck, saves me having to buy loads of chicken wings!

If I was thinking at the start that my stock was maybe a bit too salty, and was then going to reduce it by two thirds......I think a "sacrificial" halved spud might be in order, to pick up some of the salt

This is sort of one of those "how long is a piece of string?" questions. It makes as much as you need. It all depends how much liquid you have before you thicken it. To me this looks like a 2-3 person serving. If you need more than this, honestly, follow the video as-is until the point where you add the cornflour. Then if you need more, add chicken stock until you have enough for your table. The majority of the gravy flavour is coming from what's already in there, but more servings requires more liquid, so chicken stock provides this without changing too much of the flavour. Then, since you've added additional liquid, you'll need additional thickener. How much is up to you and your guests. For a litre of gravy (4-6 people), you might need a tablespoon of cornflour to get a good viscosity. If you want it thicker, 1.5tbsp. You can't remove cornflour though, so make sure you heat thoroughly after every addition to activate the starch and judge thickness, so you don't add too much and end up with wallpaper paste.

You may have heard the dinner stories of supermarket Christmas turkey's, on Christmas day, being rotten and smelling. Even though the sell by date is after Christmas. Would you recommend freezing the turkey/ goose/ duck as soon as you get it home and starting the defrosting Christmas eve. Here in my home area, we have a farmers market in the 1st week (ish) of December. Great deals on meat. Thats why I'm asking about freezing 😊 Love your show, even at 3am, when you torture me with gravy.😂

will take 2-3 days to defrost so xmas eve will be too late! ... I'd defrost at the weekend and maybe even cook the turkey on Christmas eve so it can rest ..its easy to warm back up in the gravy or just a little stock.

Sell-by dates are irrelevant to spoilage. That date's for the store. It says 'Get this out of here by this date so we can move new product into its space.' But obviously if you've bought the meat well in advance, freeze it. One day isn't enough time to thaw though. Also, spatchcock the bird (cut out its spine and split the breastbone, lay it flat). That massive cavity in the turkey really plays hell with the heat distribution. Spatchcocked cooks way faster and without all the fuss of checking in on it repeatedly. 12-pounder cooked in an hour, easy. Brine the bird too, a day or two in advance. No need for basting then to keep it moist and the meat will be seasoned. Bonus: Reheating in the brine to warm leftovers essentially makes a turkey broth you can use which over time reduces to a gravy. Nothing wasted, all delicious.

Just watched this - Brilliant and Funny, Never cooked before, but on a 'quim' have decided to cook Christmas Dinner, you added a little bit of stock to the tray after frying on the hob / deglazing / using the smallest lighter possible to add Poppy's 'finger-flavour', then added the rest of the jug of stock (750 ml?), to the saucepan, At Step 5 you then added another jugful of liquid, was this stock or just water in the jug you had just used?

I see recipes more like this quote from the first Pirates of the Caribbean movie, "The code is more what you'd call 'guidelines' than actual rules.” As long as you're following food safety rules, you can do what you want and try stuff out to find variations that work for you. Like Poppy's Christmas dauphinoise from her last video!
