I love being able to name all the ingredients and almost nail the oven temp before he even does it (I called 300). Been watching Chef John, the real master, since '08. Chef John, you're the real MVP. By the way, I made that Christmas Yule cake for Christmas and my grandmother was disgustingly jealous of my culinary talent. I for one added the cake to my rum, though. Maybe that's why she was disgusted. :D Seriously though, this is going to make a great pulled pork sub. I wonder what else I should add to it... Maybe extra sweet, but add quick-pickled veggies, I know it's Italian but this looks like it'd be good with sauerkraut as well... too many options, so little time. :'(

This has quickly become one of my favorite recipes. Uses only a handful of commonly available ingredients, inexpensive, no chopping and prep work, just dump everything into the bowl and mix, minimal amount of dishes to clean up, very simple to do, no special skills required, impossible to overcook or undercook, no babysitting over the stove, tender, has a gorgeous color, and very rich in flavor (sweet, sour, spicy, savory). And you don't even need an anchovy.

It sounds like you just make mashed potatoes whatever way you do and add an amount of ricotta at the end. If I had to guess I'd say Chef John whipped in about 15-25% ricotta.

I made this last night. Amazing! I substituted the anchovy with a TBSP of Worcestershire sauce and added 1 TBSP of smoked Paprika (as the blog entry suggested). Also made some ricotta mashed potatoes. Thanks, Chef John!

I made this today! The precipitous drop in the price of pork has made this an opportune time to try this recipe out -- so I did! I bought an amazing five-pound cut of Boston butt for only $6. I followed the recipe almost exactly, although I substituted fish sauce for the mashed anchovy and ancho chile powder for the red pepper flakes. My family quite enjoyed the recipe, and they don't really like new or "weird" foods, either, so that was lovely! They said they really enjoyed the tender texture of the pork the most. I thought the pork turned out a bit like pork rillons, myself. Great recipe! Thank you, Chef John.

Chef John - great as usual! Since it’s just my wife and I, there were leftovers. I ground the pork and made Pork Agrodolce/Ricotta/Spinach cannelonis last night (yum). This morning I finished the pork in a hash with fried eggs (yum again). Keep the great recipes coming. Thank you!

I made this tonight and it was honestly one of THE BEST new recipes I have made in the last 2 years!!! I cut some of the spices in half, and increased the honey. I can’t wait to try this again! Gonna make it with chicken.

Chef, this was amazing. I made this Feb 13th because no time on Valentines day. As I was cutting up this pork I was so tempted to cut off excess fat and connective tissue but you indicated it was important to stay - so glad I did. I did not have any anchovies so substituted with a tablespoon of oyster sauce. The smells from the kitchen at the end of three hours were just mouthwatering. As my wife walked in the door she quickly stated I could make this again before she even tasted it! The meat was so tender and flavorful. Served it over brown rice pilaf and had plenty of excess sauce to pour over for a great presentation. Thank you so much for another top shelf recipe!

I made this tonight and it was soooo good! Thanks Chef John, another great recipe! I also served it on Ricotta Mashed Potatoes, didn’t need a recipe on this, just boiled potatoes, hunk of butter a couple of tablespoons of ricotta and whipped the bejesus out of it with a hand mixer. Just Devine!

We made this tonight. It was easy, and it's very good! Ours finished well before the 3hrs was up - I checked at 2.5hrs and it was already very done, and almost all of the water had evaporated. Served it over mashed potatoes (no ricotta) - excellent! Skimmed the fat off the pan juices and stirred in 1/4 cup of hot water for the sauce/gravy. Do this - it's as easy and delicious as it looks!

..and when put in stuff like this and intended to disintegrate, easily replaced with south east Asian fish sauce. Cheaper and easier to use but the exact same funk flavor.

I did enjoy. I appreciate what you do and even though I have been fascinated and watched cooking shows since I was a small child, I still learn from you. I was thinking of what vinegars I had to use instead of the white when you said what you did about being disappointed if we didn't experiment with your recipe. This looks crazy delicious! Think I’ll make it tonight. Ricotta mashed potatoes are usually very similar to regular mp recipes, except you swap out 1 cup of whole milk with 1 cup of ricotta and 1/2 cup of heavy cream. Use Yukon instead of russet to aid the creaminess of the ricotta. I like to add a little parm to mine as well.

For those who don't want to do the mashed up anchovy filet, use anchovy paste, which will last for a good while in the fridge and is very versatile. We use it in our home made pizza and pasta sauces. It is subtle but amazing if you use it in the right quantity.

Great recipe Chef John! This really is a summer and winter recipe at the same time lol. We're having this for dinner today and it smells beautiful in the kitchen right now. I agree with you about using hands to mix because my dad who is a chef always says 'A chef's best tools is their clean bare hands' :) Rosemary and roasted pork is such a delicious combo. I've just made some ricotta mash to go along side this too 😋😋😋

I made this dish (7/29/19), following the recipe closely. The end result was an over-spiced and over cooked dish. So far, I’ve made 24 of Chef John’s recipes and have been very pleased. I probably did something wrong (I think I cut the meat into pieces that were too small.) My wife and I tried to eat this, but ended up feeding it to the garbage disposal, instead.

Cayenne is what get when you grind pepper flakes to a fine powder. And to be honest: I think it's kind of weird chef John doesn't refer to pepper flakes as "chunky cayenne" and to pepper pod that are not dried as "moist cayenne" or "fresh cayenne".
