This dish was made in Hilo, Hawaii - my home town, and it was created by a restaurant owner when he returned from WWII - part of the 442.

Cafe 100 has the best variety, but the origin is a small "diner" in Honomu...it was still open in 1983 when I was growing in the area. And it was a Hilo High School football player who got the first Loco Moco for literally a pocket of coins. As for the rest of the story...i will with it. It has been a long time since I heard anyone talk about Cafe 100 or Loco Mocos. It is good to hear people talk about my home town. Mahalo.

Correct! Lincoln Grill was the name of the restaurant. It became Cafe 100 later on. They have awesome local food.

Yo chef! I ate this all the time while I was in school. You nailed it! This really brings back memories. Thank you chef. Also I went to school in Italy and all my Italian colleges loved this dish too! They would bring in like the best pasta dishes no lie and they would trade me for a dish of this comfort food. Sometimes I would trade and you know sometimes I would embellish! But all’s in all going to school in Italy I always ate really good!

This might be one of the stranger comments you’ve received but here goes. I used to always watch your videos in middle school when I wasn’t allowed to cook because we didn’t have much money and they always made me happy because one day I was going to cook everything I wanted. I’m 16 and a junior in high school now and I’m in a better position. The virus messed up my entire life. My plans for college are now an I Don’t Know and the sport that was basically the only thing I lived for has been effectively cancelled. So now I’m coming back and I’m watching your videos because they make me happy and you’re the one thing I knew would remind me better times will come.

Recently I woke from a slumber-a mysterious presence was making a tappa-tappa at the foot of the bed! Man? Beast? Ghost? I shivered! Then a soothing voice spoke in the moonlight, "You are the peep of your sleep". Suddenly all felt right with the world and I fell into a deep sleep, dreaming of eating a soft giant marshmallow. When I woke in the morning, my pillow was vanished.

Marie Antoinette's Cake ...I used to eat at Hawaiian Barbecue, yes, with 2 scoops of rice. a scoop of Mac salad ( an ingredient is missing), hand shredded cabbage ( not the thin shredded cabbage before), times changed, not much my type anymore...😏😏😏😢😢😢🤪🤪🤪🇺🇸🇵🇭

While I have never had this dish, when I went to HI, I had a burger based on it. Big, juicy patties, with the gravy, the runny egg, and fried onions on top. That burger changed my life. I have never made or ordered a burger without a runny egg since that day 😂

2/24/2020--- You read my mind! Famously prepared at Maui Airport. They served the high quality , 3/4" beef pattie over yum pile of whipped potatoes; The dark rich gravy topped the pattie + mash potatoes, then topped with a perfect yolk fried egg. THE best part of Maui in July.Thanks for the memory !!

As someone who grew up in Hawaii I approve of the recipe. The only thing is I’m used to seeing this plated with 2 large patties and a giant mountain of rice with some Hawaiian Mac Salad on the side. So ONO!!!!

Friend, a little tip from a cooking enthusiast - the biggest chance of success comes from NOT skipping any steps if you aren't comfortable with cooking much. Step by step, piece by piece, and the rest is practice, practice, practice! Good luck

Save yourself the time and money, make some ghetto loco mocos using microwavable Salisbury steaks...ready made patty and gravy :p

No need make the sauce fancy either, just use brown gravy mix from the store. Tastes perfect and a lot easier/quicker

I enjoyed my first Loco Moco in a little place along the sea wall in Kailua Kona Hawaii, ten years ago. It can also be served with fries or mashed potato instead of rice. Thank you your recipe broth back great memories.

Wow. My Granny was cooking Loco Moco 60 years ago on a red dirt farm in East Texas. She couldn’t have found Hawaii on a map but apparently she knew how to cook Hawaiian food.

We discovered this in Lahaina, Maui, looking modest and uneventful on the breakfast menu of our 110 year old hotel. It’s simplicity and perfection of flavors and textures, oh, so good, so satisfying. DON’T OMIT THE SUGAR!! I want one right now! Thank you Chef John for sharing this! Good memories!

Story goes it was created in Hilo. A enlisted guy nicknamed " Loco" asked for a cheap hearty breakfast. The chef used leftover rice, the patty & egg & threw in leftover salad for good measure. Locos buddies added the "moco" cuz it rhymed. That's how the folklore goes from when we were young. And yes its good.

Great video! I made this tonight and it was amazing! The only thing I changed was that I cooked the patties with the Anova Sous Vide (2 4 oz patties 140º for 1.5 hours).

"Moco" actually has actually nothing to do with boogers or the spanish meaning of it lol it just rhymed with Loco. You have to understand how us local hawaiians speak to get it lol.

If my dad explained it to me right, it just references that the dish was made in Hawaii but isn't traditional Polynesian food. Hence Loco (local). And Moco both means mixed and is just a rhyme with loco.

@@stormbob Yep. But its gotta be pork fried rice. With Bacon, spam, portugese sausage, and charsui pork. The beefy goodness, the salty pork Oh yeahhhhhhh. Kihei cafe on Maui right on south kihei road near kalama park does a pork fried rice loco moco that'll lay you low. Big enough for most people to share. Hangover cure supreme.

I lived on Oahu for 3 years and had them once or twice a week. Total comfort food. In a styrofoam container with macaroni salad. Can't find any back here in Oregon.

Chef John...thank you for this recipe...I know it began in Hawaii. I did not have rice, but I had a frozen bag of seasoned cauliflower that I placed around the patty, then poured on my sauce. My eggs turned out perfect and the meal was a big hit! I love listening to your recipes...they never disappoint.

This turned out wonderfully. I had to substitute chicken broth for beef broth, and I used honey instead of refined sugar. Thank you Chef John. I'm a big fan of your recipes and videos.

@@kierangaston9494 Funny enough here where I live Salisbury steak and hamburger have become two totally different dishes! Salisbury steak tends to have more things going on in it and is served over potatoes with gravy, and hamburgers are exclusively serves on buns or in wraps

I grew up with this on the big island, everyone says it was cafe 100 that invented it for a baseball team that came in late and wanted a meal, but it actually was Koji Shintani at Koji’s bento korner in downtown Hilo that invented the dish. Actually we would have a scoop of Mac salad and Kimchee too!

I've actually had a country version loco moco in Hawaii. It had white sausage gravy over fried chicken steak and biscuits... it was there take on a country style loco moco... not really a loco moco though... never the less it was called loco moco on the menu

Having the gravy smothered over the egg, hamburger patty and rice is the common way in Hawaii, that’s how I do it at home.
