Mad Horse i love your videos man. I learn something every time I watch, and I watch them all. I have the WSM 22” and i love it. I have many grills, pellet grill as well, but it something about the WSM from styling to ease of use that keeps me coming back to it. I follow your channel all the way from here in California, i just want to encourage you to keep up the great videos, you are the man.

Nice Brian... I got a 8.9# going on my 22" WSM about 6pm tomorrow afternoon. Like you that WSM is just about my favorite smoker to use. B&B (All I use) mix of Briq's n Hickory lump. Hope mine turns out just like that. Nice color and I could see the juices. Nice job B... I got about 3" of your snow that came down the big river today. Supposed to be gone with sun out all day tomorrow then 60 Sunday... Great 2 part Video.

Great cook bro, I just started cooking on the WSM without the water pan and it's a game changer for me. I did ribs and a pork butt and the added flavor you get from the drippings hitting the coals is way better than indirect imo.

How do you get the meat to stay moist? I switched to no-pan and the meat is much drier than before....

@@MXRedits Are you keeping the temp under 300F? You have to cook fat side down as well. Try wrapping as soon as the bark sets. In my experience, the bark sets faster with direct heat.

I know where you can get some b&b cheap, Someone we know just got a pallets worth. I'm really glad to see you using wsm there is very little new content out there. I cooked pork butt on kettle last time I tend to let it ride no wrap, it looks volcanic, but after resting and being pulled it's really good, this particular time I used lodge 13" cast Iron 2 handle pan, put trivet for air circulation. When it was done I poured the content of pan over pork, it was good but probably heart attack waiting, after refrigerating it was like a rock. I got my first taste of a pellet grill offering my brother n law acquired a daniel boone gmg spatchcocked a turkey but left it on pan on grate, I like bark all around.he used a smoke tube also, I didn't think it was too bad Wsm on
