Pork & Cabbage Stew
Serves 6-8
2 Tbs vegetable oil
1 kg stewing pork
Salt and pepper to taste
1 Tbs flour
3 Tbs ZOLA’S Feasts Flavourbomb Spice
1 Tbs lemon pepper
1 Tbs fennel seed
2 Tbs garlic & ginger paste
1 onion, peeled & chopped
2 carrots, peeled & chopped
1 celery stick, peeled & chopped
1 tin chopped tomato
2 tsp sugar
2 cups stock
200g baby potatoes, halved
3 baby cabbages, cut into wedges
Season pork with salt and flour, then toss to coat. Heat oil in a pot, then brown the pork pieces until golden on all sides.
Add Flavourbomb spice, lemon pepper, fennel and garlic & ginger paste then stir and cook with the pork for a minute. Add chopped vegetables, cover and allow to sauté gently until onions begin to soften.
Add tomatoes, sugar and stock, cover and simmer for 1 hour. Add potatoes, and continue to simmer for another 30 minutes. Taste and adjust seasoning to taste, add cabbage wedges, then simmer for another 15minutes or until the cabbage is tender.
