Pork Pelau is a savory one-pot meal with stewed meats, rice, and simmered in coconut milk and seasonings. Today, my brother Fish shares his take on a Trinbagonian Pork Pelau.
You need:
-5lbs of Pork leg
-Salt (your preference)
-1 tablespoon of Oyster Sauce
-1 tablespoon of Thai Sweet Chili Sauce
-Drizzle of Ginger Soy Sauce
-1/2 cup of Ketchup
-1/2 cup of Green Seasoning (Bandhania, Garlic, Onion, Pimentos, Hot Peppers)
-1 tablespoon of Cooking Oil
-3 tablespoons of Brown Sugar
-1 Onion, thinly sliced
-6-8 cloves of Garlic, sliced
-2-4 Pimento Peppers, sliced
-1-2 Hot Peppers, sliced
-2 cups of Coconut Milk (or 1 package of coconut milk powder, diluted)
-2 Carrots, sliced
-1 large Sweet/Bell Pepper, cubed
-3 1/2 cups of Parboiled Rice
-6-8 cups of Water (preferably boiling)
-1 Maggi Vegetable Soup Mix & 1 Maggi Thick & Spicy Chicken Soup Mix (OPTIONAL) - Use chicken stock or bouillon cubes.
-2 1/2 cups of boiled Pigeon Peas (frozen or fresh)
Salted Margarine Golden Ray, Golden Cream, French Maid (OPTIONAL) - or Salted Butter
