Due to the various multicultural influences on Trinidadian food, we have a lot of unique dishes that we call our own. Pelau is one of those dishes that has a lil' touch of everything in it and that's why it's one of our national dishes. Pelau is similar to the African and South Asian dish, Pilaf and also to Guyanese Cook-Up. It's a one-pot meal that is filled with goodness.
You can add any type of meat and veggies to it. Follow my simple recipe and you'll definitely enjoy it! Enjoy this with some Kuchela, Coleslaw or a nice salad.....you won't be disappointed!
This recipe will yield about 6-8 servings.
Ingredients:
2 lbs of chicken, cleaned and washed
green seasoning
salt
black pepper
soy sauce
2 tbsps ketchup
1 1/2 cups of rice
1 1/2 tbsps brown sugar
oil
1 cup of frozen pigeon peas (boiled for 10-20 minutes)
2 small carrots, chopped
3 pimento peppers, chopped finely
1 whole stalk of celery chopped finely
1/2 bell pepper
2 stalks of scallion, chopped
1 can of coconut milk
1 pack of Maggi vegetable soup mix (*Optional)
Golden ray butter (*Optional)
hot pepper* (optional)
