So, bottom line: less rosemary, add chicken stock (or other stock, or perhaps even a little white wine?), and we have a winner? Please still think of this as a success. It's a successful lesson :) You're awesome as always, Chef John.

Add it as a stick /twig with the shallots and remove it after 4-5 min in the pan. in the end after the sauce is ready add some dried rosemary. Its like oregano, if you cook it too much it makes everything bitter.

I've done the rosemary overdose myself, Chef John. It takes a great chef to admit - no - a great person to admit a mistake. We're fooled by the color of the herb, is all. No green anymore? Add more! If we don't try anything new, we don't grow. Cheers!

I use rosemary with extreme caution, but for an entirely different reason. I was reaching into a jar of the dried stuff to sprinkle into an Italian chicken dish I was making, and one of the leaves jammed itself under my fingernail & broke off flush! I had to undergo a procedure at the clinic to remove it. Learn from my pain... use dried herbs only in desperation.

Well he said the Pork Loin was cooked well so at least that's something to take away from this disaster. I'm nothing of a cook myself but I could spot that amount of Rosemary from a mile away.

Aside from the obvious, I’d add a splash of balsamic when you add your grapes to the pan.

It isn't really a recipe fail, just a sauce fail. My grandma always told us if you screw up a pan sauce beyond recognition just put enough wine in it so nobody can tell.

I just made pork tenderloin tonight! I decided to wing it except for the temperature I had to google. Salt, peppered, herb du provenced the pork loins and browned in 3 tbsp butter, couple splashes of some rose wine hiding in the cupboard, popped it in 425 degree oven for about 30-35 min. Perfectly seasoned, juicy, and moist bork tenderloin. And it was my first time making it all by myself! So happy!

This makes me feel immensely better about my FAIL today in the kitchen. I made citrus blueberry cake, and was very careful to fully coat the blueberries in flour and they still ALL sunk to the bottom and completely ruined the cake! It's nice to see that even very experienced chefs have their screw-ups! I am making a second attempt right now so I don't lose my confidence! Thanks, Chef John!

Enjoyed watching this, as everyone has had something fail, and a good way to learn. I find that rosemary is one herb I have to use such a light hand with as it is so strong. But it is so easy to over do like you showed. Thanks for sharing.

I think you are the only person who makes 'inedible' food look incredibly delicious. I love these fail videos! Would love to see another one. Not because I am into schadenfreud, but because I feel like I'm not the only one who overdoes it with rosemary.

That was too funny. Thank you for sharing. It is a frequent mistake of mine (now much less since I started watching your videos) - I'd make something fantastic and then at the end (call it hubris) I'd add one last EXTRA ingredient and ruin the whole thing. :)

I really do enjoy it when you share your kitchen disasters. Not that I am happy that it turned out poorly, but it is comforting to know that we all experiment with recipes that really just turn out.

I mess up my recipes whenever i make them for the first time lol. That's one of the great things about cooking, there's always room to improve! Whenever i make the recipe for the second time, it's sooo much better. You live and learn.

My guess is if you reduce 90 percenr of the rosemary with mushroom and bacon - and cayenne - everything will be fixed.

Even when you fail, you do it with style! When I first tried Rosemary, I fell in love with the flavor. Needless to say, I let that love fool me on many recipes that should have been made sans rosemary lol! Love the idea of grapes with pork though!

Not sure if this is just not a thing in the us, but I always have some dry broth at home. It's great if you wanna add the flavor of stock to something that already has liquid and that you dont want to cook long enough to reduce stock. It's also great in marinades and lasts forever, it only clumps eventually. I know it's not as good as proper stock, but in a pinch it's still fantastic.

Pork and (white) grape are surprisingly a very good combination. I found out accidentally when eating roasted ham hock and snacking on white grape at the same time. The sweetness and tartness of the grape adorn the savoury taste from the pork and make it somewhat lighter. Very pleasant

About the time that you said that you were not drunk, I was just about to ask if you were stoned. I feel for you! I thought lemon chicken! That sounds delicious! I managed to add three whole lemons to one chicken and roasted what became the nastiest thing I've ever made in my life! This was probably five or six years ago and it still gets brought up!

Hmmmm to make this recipe better the water could be replaced with a bit of white wine, and you could slice the grapes to bite sized pieces and use just a pinch of rosemary and a bit of thyme.

He did not mention adding white wine or thyme, however everything else he did mention, I was just providing a little insight to the dish for those who wanted a little more info on how the dish can be better.

This. This is why I god damn love you. Seriously, I watch several KZbin chefs, and I can say with earnest that I have never seen any of them claim their mistakes. They've made them. Don't tell me a KZbin chef with hundreds of videos has never made a mistake. They just always behave like everything they cook is the best thing they've ever eaten. Even worse is the Vitale route, which is claiming that every other thing they create is "one of my favourites". Edit: Don't get me wrong, I like Laura Vitale. It's just that you could turn the words "this is one of my favourites" into a dangerous drinking game with her videos.

Love your channel John. Your courage to show your mistakes definitely makes you more endearing to your audience. I've tried several of your recipes and everything has come out extremely well except for my murdering of your Zabaglione.... which I cooked too long and did not add enough sugar to since I was using "sweet" marsala. I know, my fault for not tasting while cooking. Mea Culpa. Please keep sharing.

I'm totally impressed that you posted this fail. Your humility is charming. I think the worst was the excess rosemary and water, right? Should you maybe slice red and green grapes so they are more user friendly? The cream does look good, however. I might try making this anyway. At my own risk, of course. I hope you re-do this sometime when it turns out better.

I learned to cook through trial and error, and I still experiment with new ideas that way. Sometimes you are pleasantly surprised, other times you just have to say "Ok, that went badly", figure out what went wrong, and try again.

Thank you very much for the opportunity to watch a master fail. It does make me feel better when I foul things up. It is also brave of you to let us watch it happen. Now we have all learned. Not everyone would do that. You should have added some awesome; it might have helped. God knows you have plenty of awesome.

I made the best rolled pork loin for Christmas. Stuffed with onions, garlic and apples. It was great EXCEPT for the mysterious science experiment that turns out to be the combination of the onion garlic and apple - turned bright GREEN like a leprechaun. Lucky I had a pork belly that I made for the extra crackle.

Just bought a pork roast and got home to look up Chef John’s recommendation. I have rosemary growing on the deck and I will leave it out there Don’t have any grapes which is good. I watched until the end to see if he said “enjoy”. I guess that’s his signature I will try to learn from his errors as the pan sauce sounds like a great idea without rosemary 🤞

Great video. I really got a kick out of it. I made some chili a few weeks back and added too much brown sugar to it. Same type of result. It's comforting to know that this happens to truly talented chefs like you too.

we all have failures, but not all of us have the roasted grapes to post them on KZbin. I am in the crowd of Rosemary haters here, love the pork loin, but can't take the pine needles, I leave those for decorations at Christmas, never in my food. Thanks for the giggles, proud of ya.

I actually made this for a soccer banquet and it came out great. I cut the grapes smaller used less Rosemary and a bit of thyme. With some lemom water
