A good broth of Pork Ribs Prawn Noodle says it all! This Singapore's dish is the best comfort food that you can recreate at home. Yes it takes some time to make a good bowl of Pork Ribs Prawn Noodle Soup but I can tell you, it's worth it!
The recipe is for four servings, if you can't finish it, feel free to keep the broth in freezer, it can stay up to 3 months. Comfort food is always ready!
In Singapore, Pork Ribs Prawn Noodle has two versions, dry and soup. The cooking steps are similar, the difference is on how you serve it at the end. I am going to show you how to make the soup version in this video.
So, how to make prawn noodles with pork ribs?
Here is what you need:
INGREDIENTS (for 4 servings)
1. For cooking
• 500g whole large prawn/shrimp
• 1kg pork ribs
• 2.4 litres of water
• 2 medium shallots
• 2-3 cloves of garlic
• 2 star anise
• 4 cloves
• 1.5 tbs white peppercorn (reduce for lesser peppery taste)
• 5 tbs fish sauce
• 1.5 tbs dark soya sauce
• 1.5 tbs soya sauce
• 5 tbs oyster sauce
• 2 tbs of small rock sugar cube (adjust accordingly)
2. For a bowl of noodles
• A handful of beansprouts
• Fish sauce with cut Thai chili
• Finely chopped Spring onion
• Crispy fried shallot
• Cayenne pepper powder
• White vermicelli noodles/ yellow egg noodles (medium) / kwayteow or a mix of them
STEPS:
1. Making the broth
• Trim fats and cut ribs into large pieces
• Soak them in cold water for 40 mins to remove blood
• Remove heads, shells, and devein shrimp. Refrigerate the shrimp.
• Finely mince garlic and shallot
• In a stock pot under medium heat, add 2 tbs of oil
• Fry minced garlic and shallot until fragrant, then add shrimp heads and shells
• Fry and use a potato masher to extract more juice from the heads
• When caramelised, add 2.4 litres of water and bring to boil
• Rinse ribs until water runs clear
• Add ribs to pot and let boil
• Meanwhile toast star anise, cloves and peppercorn in a small pan until fragrant
• Put the spices in a tea strainer/mousseline spice bag
• Skim off any foam in the broth
• Add fish sauce, dark soya sauce, soya sauce, oyster sauce, rock sugar and spice bag
• Simmer for 2 hours or until ribs are tender
• Skim foams occasionally (if needed)
• Remove ribs after 2 hours. Optional: submerge in water to prevent them from turning dark/dry
• Remove shrimp shells and strain the broth
• Add the strained broth back to the pot
• Taste and adjust if needed
2. Eating time
• Bring broth to boil then cook peeled shrimp in the broth
• Remove shrimp after 45-60 seconds and set aside
• Boil some water and slightly blanch beansprouts
• Cook noodles according the package’s directions
• Assemble a bowl: add noodles, beansprouts, some ribs and shrimp, spring onions. Pour hot soup, then add some crispy shallots on top, sprinkle cayenne pepper powder to taste. Dip ribs/shrimp into fish sauce with cut chili. Time to eat your heart out!
