1 pork loin
1 onion,
1 clove of garlic,
2 cups of water or stock,
100 g of tomato paste,
1/3 or 1/2 cup of heavy cream plus 1 tsp of potato starch (or corn starch),
seasonings to taste: salt, pepper, sweet paprika, Italian dry herbs or Herbs de Provence
Remove any tough membranes from the meat and cut into thick slices. Sprinkle with seasonings. Cook your pork loin on a heated skillet with a bit of oil, until lightly golden on both sides - the meat should be still raw inside. Set aside.
To the same skillet, add finely chopped onion, cook for few minutes and add finely chopped garlic. Add the meat back in, add tomato paste and cover with liquid (add enough water to lightly cover the ingredients in the pan). Simmer on low for about 5 minutes or until tender (do not overcook the meat!). If your sauce is too thin, mix the starch with cream, creating a slurry. Add gradually to the sauce and simmer, until thickens. Serve over mashed potatoes, rice, gnocchi or pasta and some crunchy slaw on the side. Enjoy:)
