Oxtails were one of those things that you had to cut every day as an apprentice meat cutter years ago. The new young guys had to process all the offal such as beef, calves, and pork liver, tripe, kidneys, sweetbreads, etc., plus trim the mountain of bones generated everyday. Now most grocery stores don't carry that stuff anymore, you will find them in most Mexican grocery stores, but now they're pretty expensive when you find them. Fulton Meat Market in Chicago still sells them whole. Most offal is exported overseas to South Korea, China, and many other Asian nations. I love the flavor for beef stock and soup.

I've asked 3 different supermarket meat departments and they all told me that they have whole tails in stock or could order it for me. Maybe it's just the supermarkets in Florida???

Thank you for this video. I just cooked an ox tail, but had to cut it first. My way was pretty difficult! I will do much better next time after watching this. (:

Hello Chef. I worked in a steakhouse from 1975 to 1983. There were mainly Chinese that came and went in that kichen. One guy, Chin, by name, used to make "tail soup." Ol` Chin would boil the tails, which came off the veal legs, and would normally go into the stock pot, and cook them, with cut up tomato- nothing more. Far as I can remember, it would get salt and pepper. At the end of the night, that soup would be so delicious. With some buttered Italian bread, it would rival a king`s meal!

The bigger, meatier pieces are so much better 'cause in a stew they are so voluptuous and tender. I really hate it when places like Publix sell oxtails in packages which contain 2 large or medium pieces and 6 tiny bones with barely enough meat & fat to feed a dog. If I see 2 packages holding 6 or 7 good size portions, I'd buy those (though they are so freakin' expensive) and sometimes freeze them in marinade for latter use.

Just for the record - you can walk into any publix and order a whole tail in a box and it's actually cheaper then buying the cut up ones in publix. I only know this because I live in Florida and was once forced to buy a whole tail at a publix. Sometimes they even have the whole tails in a box frozen - on hand, which does not require a special order.
