Hey DJ BBQ. I was wondering if you can do a "Matambre de cerdo" (how we call it in Uruguay) with your own stile. Its skirt steak pork marinated with garlic, orange and lemon juice and zest, ginger, rosemary, salt and black pepper. You leave it marinate like 1 hour and then you grill it side by side and boom! It is AMAZING!! Pour some lemon juice and some smoked paprika when it's done. Killer starter for a nice sunny day of barbecue. Hope you like it and do it your way. Cheers from Uruguay! You rock!!

They should all open during the cooking process. If they don't it means they are bad and you shouldn't eat them.

I ate some of that in Portugal recently, it was excellent dish but it was called by a different name. I made a version, not marinated, no wine, sweet potatoes and it came out very good. Now I will try the real recipe

In america we call the seed coriander and the leaves of the plant cilantro. In other countries its all considered coriander. coriander seeds and leaves.

lol this is a nice "have a try" but not a carne de porco à alentejana :) you have made a rather fast and easy version of the dish but it's ok cos your not an alentejano :D plz make some more trips in Portugal along the Alentejo and other regions up north and the islands of the Açores and Madeira and you will understand entirelly the diference in the regions and the influence in the dishes Some dishes: Açorda de Bacalhau Migas de Espargos com Carne do Alguidar ou Entrecosto Frito Costeletas de Borrego Assadas, Grelhadas ou Estufadas Lombo Assado no Forno Secretos de Porco Preto Carne de Porco à Alentejana (the REAL one ;) Caldeirada (to be a Caldeirada it must contain at least 3 types of fish and some seafood or you can do it with just Cod - Caldeirada de Bacalhau) Cataplana Polvo à Lagareiro (my fav!!!) Salada de Polvo Choco Frito Chocos com Tinta (you really have to try this one cos... you'll see! ;) Iscas Grelhadas ou Estufadas Salada Russa Bacalhau à Braz (for Cod we do have more than 365 recipes...! so it's very dificullt to point out... we are Cod lovers XD Costeletas de Veado Grelhadas Carne de Javali Estufada Chanfana Moelas Estufadas Feijoada à Portuguesa Francesinha Leitão da Bairrada (if you don't show this one in your videos... it will be a crime!!! I could go on for days and still there would be a world to be writen if you know what i mean... If you open a restaurant in the US with this dishes... it's a gold mine i tell you hehe Red wines: 1º Alentejo 2º Dão 3º Douro, for meat White wines and SPECIALLY Green wines from the Minho region, for seafood and fish however you can drink red wines with Caldeirada cos it's a stew Moscatel that you enjoy so much must be from Setúbal, to start your meal, not from Favaios (i can't stand it argh :D Madeira wines are sooooo goood Port wine, Arrabidine or Aguardente de Medronho for the finish I am not even writing desserts... that's another bible Please show a bit of this and keep up your WONDERFULL work man!!! :)
