Recipe for the big dough :200g of cake flour 200g of shortening 135g of butter. For the small dough : 100g of all purpose flour 20g of shortening 10g of super fine sugar 20g of whole egg 45g of water. For the filling : 85g of egg yolk 70g of super fine sugar 250g of fresh cream 125g of milk. Method of big dough : combine all the ingredients with your hand,once combine shape the dough into square looking then put it in a plastic bag to rest in the fridge for 30 minute Method of small dough :combine all ingredients except water , add water little by little to see the texture,once it's done pit it into a plastic bag and rest in the fridge for 30 minute. After resting take out the dough and sprinkle some bread flour on the counter and gently roll out the small dough to cover out the big dough , once u cover the big dough gently punch the dough to flatten it down then fold the dough as the video showing. Rest the dough in the fridge for 30 minute. once is done take it out from the fridge and roll it out.Then you can cut it with a round cookie cutter,place the dough into the mold and press it down as the video showing. Method for the filling : heat milk and sugar on the stove top and heat it until the sugar just melt,then in another bowl combine the egg yolk fresh cream and mix well,pour in the milk mixture to the egg yolk and fresh cream mixture while mixing.Then strain it to a sifter. Pour it into a measuring cup then pour it to the dough up to 80% full then put it into a preheated oven for 20~25 minute In the video does not say the temperature of the oven so I use 180 degree celsius. i hopr is helpful :)

***** 200 gm soft/ cake flour, shortening 200, 135 gm butter. Water dough --100 gm flour, 20 gm shortening, 10 gm sugar, 20 gm egg ,45 gm water. Egg custard - yolk 85 gm, 70 gm sugar, 250 gm fresh cream, 125 gm milk.It is more like Portuguese egg tarts not Hong Kong egg tart as Hong Kong egg tarts have no burn ontop ! Hong Kong egg tarts don't use fresh cream only milk.

its a cooking show not a beauty show nothing to do with what they looked , MAN! by the way , they both got big round eyes and they are sweet , how about you ??? well, you might look OK outside but inside ugly , who knows??!!
