I am the grandchild of Azorean Portuguese immigrants. I am cracking up. A southern guy, using a recipe from Ruth O'Donnell, to make Azorean kale soup. Funny thing, as many times as I have seen this done on KZbin he gets it just like my maternal grandmother made it (except she used chourico and not linguica - not quite as piquant). T-roy, I love your videos and am a big fan of your work. I'm Portuguese (from the mainland) and realize there are regional variations in recipes (the linguica and addition of beans makes me think it's more of a dish from the Azores). If you'd be so inclined to do a retry of this recipe, I can give you my mother's family recipe. It's a simple soup with a few ingredients that really lets the ingredients shine on their own. It was a poor man's soup where my family comes from and my mother grew up very poor so I guess you can say that they perfected this recipe. Now the family is doing much better but this recipe is still a huge staple for us! Either way, cheers to you, brother! Keep up the great work. Love your content and your personality!

I'm Portuguese and there are many version of this soup. Yours looks very good. My grandfather came straight from the Azors over 150 years ago and my grandmother, my mother and ever Portuguese person in the so called village that I grew up in never used collared greens, always kale. And also used yellow eyed beans. Yes they are hard to come by so you have to use what you have. As I said there many version of this soup. If someone tells you that they're offended by your version I'm sure in time they'll get over it!! So I'll just ask you to please keep putting out your great recipes!!! Thank you...

Looks really great! When I make it, I also add cabbage. I also use a couple bay leaves to cook with (throw out before eating). You can throw a beer or wine in there too. Tastes even better the next day. Thanks for the video!

My mother, Azorean born, adds two cans of Cannelini Beans. Pours out the can juice from both cans, pours one can in with whole beans. The second can she breaks up the beans with a wooden spoon then pours in the can. Adds thickness that is so perfect for the broth.

+crackedmasonjar This recipe would be fantastic with any sort of smoked meat. The Kale was still sort of crunchy, so if you need it to be softer, just cook the soup a bit longer. I might even add in the kale in near the end so it would be more crisp. I don't know, maybe have something slightly crisp in a soup is a goofy idea. @Sean Helm This isn't my video I was responding to a comment and frankly I don't use a recipe; I was taught to use beans that have been soaked and "a little of this and a little of that". It is the same as when I make Southern food from my husband's Nana - no canned beans, greens and no measurements other than when baking. Also, where I am from we don't use that disgusting term that you so casually dropped.

That bean and bacon condensed soup were total surprise. So I got a question : What's the difference with chicken broth and stock ? I have always used broth for everything. :)

Chicken stock tends to be made more from bony parts, whereas chicken broth is made more out of meat. Chicken stock tends to have a fuller mouth feel and richer flavor, due to the gelatin released by long-simmering bones.

Hey. I will look for that sausage but I have learned long time ago that I cannot find none of them goodies you guys use over there. If I happened to find it I will put it in the soup instead on top of bun. He can't just have all the goodies without some real goodies like kale. Good recipe. I recommend you sear the Linguisa pieces first then render the glaze from it with the onions and potatoes. Just a suggestion that will make it come out even better IMO. Also red kidney beans

I would like to make a few minor suggestions.. brown the sausage first and render out some of the fat.. then you wont need to add oil to cook up the onions and garlic and youll get a lot of the flavor out of them. Also as far as the beans.. Sometimes I will throw in 3-4 different kinds of beans. You can literally add whatever you want.. even corn.. and it will be delicious. The corn actually adds a bit of a sweet flavor to it which goes nicely with the sausage and potato mixture. I always throw in a little franks red hot :) I might have to go make me some of this later today.

White beans and bacon are so easy to cook, and whole, fresh Kale is so cheap to buy and prepare, I'd recommend to TOSS the cans & bags and cook the beans and bacon and chop the Kale... the rest of this recipe stands -- nothing better than saving a few bucks by preparing fresh food rather than buying packages products. To make Linguica, or any other type of sausage, there are countless easy-to-follow recipes online.

never ate Kale, most of my greens is Poke Salad, Spinach, Collards, Turnip greens and some sort of ham hock, salt pork or even bacon ends, and some sort of hot pepper he heee But Hey you made it its got to be good YUM Yes it looks delicious and the ingredients sounds good to me, and i'am sure it will keep ya warm inside on a cold winter night, I KNOW I'am GOING TO GET A LOT OF STUPID LOOKs, and questions what is Kale he heee ITS A GREEN he heee if i can fine Kale in this little hick town, i will make it its all good and fun CHEERS MAN

+426 SUPER BEE Thanks bro, any sort of green would work in this soup. Kale tends to be a thicker leaf and holds up very well during the cook, so it still has a crunch. Also, Kale doesn't have as strong of a flavor as turnip or mustard greens. Yes, you know I had to add some Louisiana hot sauce to the soup!!! Good stuff!!! Cheers brother!!!

Well this is not Portuguese Kale Soup. It's a variation. Maybe some Brazilean influence there. Portuguese Kale soup you put 4 or 5 medium potatos, 1 large onion or 2 medium, 3-4 garlic tooths and some linguiça (not sliced but whole, and in less quantity) or some spanish chourizo, some olive oil, and add enough water to cover all the ingredients and some salt and cook it for about 40 minutes. After that you remove the linguiça/chourizo and you use the magic stick to rence all the rest. See if it needs more salt. After rencing add some chicken broth. Then you add about 1/4 kg of kale (in thin slices) and cook it for another 10 to 15 minutes. At the end add the linguiça/chourizo in slices. Ready to eat. Thats my own recipe, very close to traditional portuguese kale soup.

Mm Mm, Kale soup is great.The Portuguese sausages chorico & linguica are both good . But the Portuguese chorico is for the Kale soup & the Portuguese Linquica is for frying and sandwiches.Also you need a shin bone with some meat on it. cheers

I've never seen it made with a can of bean bacon soup. Some do use kidney beans and some put can of tomatoes in. I don't. I grew up eating this. One of my faves. Try it with chorizo and a beef shank.

Great job.. Just something for you to try next time for flavor town. First keep using Linguica... But its not Linguiceeee its Linguicaaaaa.... There are two more Sausages that we have more flavor and spice. One is Chourico, pronounced Shorisooooo, its a HOT version of Linguica, not to be confused with the Spanish Chorizo that is milder than the Port version. The next sausage is, Morcela! Portuguese Blood Pudding, don't knock it till you try it. That sausage will infuse the soup with a delish smoky flavor. Also add an entire chicken leg to the soup, again bringing flavor to the mix. And for added Salt get some Tocinho (portuguese salted pork belly) and some beef shank. Add some whole potatoes and you actually makes two meals in one. One a soup, the other a Meat/Sausage and Potatoes meal. Give it a try.. Again good job, from a proud Azorean Portagee..
