They are called Quesabrillas. The original is made of goat, not lamb. In Mexico, grilled young lamb is called cabrito. Birria is shredded goat stew. Those tacos are based on the Birria, but instead of serving it on a bowl/plate, it was fused into a taco dorado. Many locations make Quesabrillas with beef. And yes, they are da bomb. Glad you liked them.
