Jabin. I know you used to be a fan of the dry brine. I guess you have gotten away from that or are your rubs salt free ?

I dry brine when I have time or often bigger cuts. This was a last minute find. My rubs do contain salt so what you can do is put the rub on then put it in the fridge for a few hours or overnight.

Hey Alan, glad you love this one! This was Sterling Silver which is not prime but not traditional choice. It's kinda the top end choice or lower end prime so right in the middle.. Up in Canada we have a bit difference grading system Canada AA (select), Canada AAA (choice), Sterling Silver (higher end choice/lower end prime), then Prime which is actually harder to find depending the cut. So the Sterling Silver is usually my go to.
