Even though I'm a White Capetonian, this is exactly how my mother cooked as well. Those bredies in winter were the best - we had very little money and she could make a meal tasty and it could streeeeeetch to feed everyone. Only now realising how Capey we all are, White, Brown or Black, we all share this wonderful, unique Cape culture - and I wouldn't have it any other way. You have to slowly brown the onions and meat until we’ll browned. Then the potatoes will take on that brown colour.
