Here is the recipe to prepare delicious potato gnocchi with tomato sauce and basil:
Ingredients for the dumplings:
1 kg of potatoes
300 g of 00 flour
1 egg
Salt to taste.
Ingredients for the tomato and basil sauce:
1 finely chopped onion
2 cloves of garlic finely chopped
800 g of peeled tomatoes
A handful of finely chopped fresh basil
Extra virgin olive oil
Salt and freshly ground black pepper
Preparation of the tomato and basil sauce:
1. In a frying pan, heat the olive oil and saute the onion and garlic until golden brown.
2. Add the peeled tomatoes and the chopped basil, salt and pepper to taste.
3. Simmer over medium-low heat for about 20 minutes, until the sauce thickens.
Gnocchi preparation:
1. Cook the potatoes in their skins in salted water until soft. Drain, peel and pass them through a potato masher or sieve.
2. In a bowl, mix the mashed potatoes with the flour, an egg and a pinch of salt until the mixture is smooth and homogeneous.
3. Divide the mixture into small parts and roll out on a floured surface to form cylinders of about 2 cm in diameter.
4. Cut the cylinders into pieces of about 2 cm and give the characteristic shape of the gnocchi with a fork if you wish.
5. Cook the gnocchi in boiling salted water until they rise to the surface.
4. Serve the gnocchi with the tomato sauce and fresh basil.
