A hearty potato-leek soup will warm up your belly and get you into your sleeping bag on a chilly Fall evening on that upcoming autumn camping trip. Just because summer is winding down doesn't mean opportunities to go camping have come to a close. Just the opposite! I have had some of the most fun and memorable kayak camping adventures in September and even into October. In the so-called shoulder season you can often get your pick of the choice camping spots and have them all to yourself. The trade off being that sometimes the weather might not be great and the evenings do get chilly. It is time for soups and stews. I have posted a couple of stew recipes on my channel, and I invite you to take a look at them. But today it is soup, a potato leek soup to be exact. A simple enough recipe to put together in camp using only a few ingredients and a short cook time.
Ingredients
2 medium potatoes, (I used Russets, but you can use any potato) small dice
1/2 cup finely diced leek
3 cups vegetable stock, or water
1/2 tsp garlic powder
Salt and pepper to taste
1/4 cup milk, heavy cream, of coconut milk
1 green onion, sliced for topping
1/4 cup diced cooked bacon for topping
In camp, or at home
Heat a tbsp of oil in a large cook pot. Saute leek for 2 to 3 minutes until tender. Add potato and enough liquid to just cover potatoes. Simmer on medium to low heat until potato is tender and can be pierced with a fork easily. Turn off heat and stir in seasonings and milk of your choice.
If making at home ahead of time remove a cup of the potato and then use a food processor or immersion blender to puree the soup. In camp I use a potato masher which works quite will. Return the cup of un-mashed potato to the pot. Serve with toppings of your choice. I highly recommend some bacon!
