This cake is finally frosted and ready for eating! Next time I make it, i will use parchment paper in the pan. I greased my pan, rested for 5 minutes and still it stuck. It must be my pan. So I frosted the bottom, and it covered up the damage. I ate the damage ... to test the taste ... Bonita, you've done it again girl. A winner!

I had no idea pound cake was that simple. Definitely going to give it a try! I make vanilla buttercream frosting all the time for cakes, but never thought to put coconut in it. I bet that would taste great on a lot of cakes (yellow, chocolate, banana, lemon, etc...).

I made this loaf without the icing and its lovely. Not very sweet and I used plugra salted butter inside and to grease the pan. So my loaf has a nice hit of salt and I added a pinch of nutmeg. Well done Bonita!

Hi Bonita, thank you so much for this recipe. My brother loves pound cake and I'm putting the one I made just now into the mail tomorrow. I have a question. Your batter looks smoother and finer than mine did. It's out now and looks good, but I'm just wondering what could have been the difference? I followed the recipe exactly. Who knows, maybe it's fine. I hope it makes it to my brother's place in downtown TO before his birthday. I'll wrap it well. I used an electric mixer and sifted the flour, etc. The batter was very thick. Yours was too, but it didn't look quite as thick as mine. Any ideas? Anyway, thank you for this recipe and I'm sure it will be delicious.

Hi and thank you for stopping by and for making our pound cake recipe, this is a tasty cake and I'm sure yours will be great and he will love it. The next time you make it if you need to add more liquid to the batter thats ok but no need to over mix it or worry about the smoothness. Having the butter and sugar creamed together smooth is ok, using a mixer work great with this recipe as well. I hope this helps and stay safe and enjoy. :) Bonita

@@bonitaskitchen Thanks for the tips Bonita! It came out looking great at 45 minutes and came out of the pan easily. So that's a good start. All I need is a taste test now...if my brother will give me any! Have a great day, the sun is shining here in Toronto and it's very mild.

I'm a butter lover but I had to giggle at your "lightly greased" loaf pan. My mom and grandmon described a "pound" cake as a pound of sugar, a pound of flour and a pound of butter. (I've never actually tried this.)
