Ig with the pickles it’s a smell thing Mabey the pickle juice will make hands smell like pickles where the meat won’t as much but not 100% sure in my kitchen we don’t use gloves unless it’s raw meat especially chicken we just wash are hands a lot

The reason why he does that is because some food items are RTE, which means ready to eat, these foods are able to give to the customer and eat them immediately. In the culinary world they have to do this for sanitation reasons.
