A good way to start is with a basic two line stunt kite, like a Peter Powell type, these are very forgiving and easy to learn with, they will help anyone get their head around pulling the left line for left turn, Right for right turn, learning what a wind window is etc Power kiting is fun, have you done any Drayton ?

Recently started with a Peter Lynn Hype 2.3, which is a 2 liner. Wow what power. After 1/2 dozen flights and mastered looping, but mostly "low wind" flying...I want more. So, got a 4M^2 Hornet with handles. Scary at first even in 2-5 knot winds. Now, okay in 5-10 knots. Thinking about a bar to allow me to one-hand it and also a landboard. I'm not accessible to beaches, so mostly inland in parks and concrete rivers of LA.
