Also I made a 100% IPA oat based beer and got it up to 13%. I also added honey and pumpkin. Dang don't under estimate it.

I love oat additions in beer! Obviously already great in stouts and porters but like Max said, I also love the smooth mouthfeel they can give other styles 🍻

they are quite tasty when used properly, enhancing the mouthfeel without gaining sweetness out of it is key. (+1 for Oatmeal stouts, they are fantastic!)

Does the beta glucan rest (or merely adding store-bought beta glucanase enzyme) not affect the mouthfeel? I'm curious because it's often said that the beta-glucans are what cause the mouthfeel difference. I don't have much experience with this, but have a couple recipes that I'd like to play with incorporating some oats into.

You should add Beyond the Pale, Stray Dog, Flora Hall and Gallicus to your list. Oh and if you don’t mind the drive, there’s Small Pony Barrel Works in the west end. There’s a lot to drink in the region, glad you love the videos too! (There might be some Hops & Bros V3 left at Tuque de Broue in Embrun if you take the 417)

Broue Ha Ha in Gatineau is one of the best. If you want a nice bar then Bar Lupulus or L’Autre Œil are fantastic
