My grandmother used to make appam those days. The important part of appam is you need to make only 1 turn once you pour the dough in the pan and the rest of the dough comes in the middle. This will make the appam fluffy in the middle and crunchy at the side.

This is thosai batter making hoppers. Srilankans make original hoppers. We only take white raw rice flour and coconut milk. This is fine batter and fine hoppers. You are taking lot of trouble and difficulties with more ingredients.
