Could you please comment on where centerboard should be for the various points of rudderless sailing on the Quest thanks

Yes, best to pull up the centerboard half way to reduce the tendency to pivot toward the wind (weather helm). The centerboard should be kept at the same position - balanced, half way up - at all points of sail, with your main controls being the jib and main. Sail trim and weight balance are much more important to keep a point of sail and you don't want to be distracted by the centerboard.

In the Quest, I imagine it might help to rotate the board back a bit for less weather helm.
