Hells Kitchen is made up of professional chefs and they should know a lot of the things that they’re being asked to cook. Kitchen Nightmare/Hotel Hell - it’s for people who are in the profession and should know better in their areas customer service, respecting their customers and food... He’s a hard ass on people who SHOULD know better and also for drama’s sake... But when it comes to actually having a passion for cooking or a desire to learn to cook... (Masterchef/Masterchef Kids), he wants the contestants to do the best they can. It’s like how a great coach can see talent in the athletes under him/her. If the coach is good, then that person will push their athletes to success and become the best they can be. Or remind those who SHOULD know better that they should be better...
