Prawns Mango Curry
PREPARATION TIME : 15 minutes
COOKING TIME : 30 minutes
SERVES : 5
INGREDIENTS:
• Coconut oil
• Fenugreek seeds
• Curry leaves
• Ginger
• Garlic
• Green chilli
• Shallots
• Turmeric powder
• Chilli powder
• Coconut milk
• Raw mango
• Curry leaves
• Coriander powder
• Salt
• Cleaned Prawns
Let’s get started,
1. Add 2 tbsp of coconut oil, 1 tsp fenugreek seeds and curry leaves.
2. Add 1 tbsp chopped ginger, 1 tbsp of chopped garlic, 2 sliced green chilli and sauté for a minute.
3. To this, add 5 shallots and sauté for 2- 3 minutes.
4. Add ½ tsp turmeric powder and mix well.
5. Add 2 tbsp of chilli powder and 1 tsp of coriander powder and 3 cups of thin coconut milk.
6. Stir them well. Cover and cook for till it boils.
7. To this, add salt and 500 grams of cleaned prawns.
8. Use 1 big raw mango, slice them, and add them to the dish.
9. Mix well, cover and cook for 10 minutes.
10. Add 1 ½ cups of thick coconut milk and add 1 sliced green chilli and curry leaves.
11. Cook for 5 minutes in low flame and serve hot. Goes well with Appam, Kerala Porotta, Chappathi or even with white rice.
