Prawn Donne Biryani is a flavorful and aromatic Indian dish that combines succulent prawns with fragrant rice and a blend of spices. Here's a recipe for Prawn Donne Biryani:
Ingredients:
For Marinating Prawns:
1000 grams of prawns, cleaned and deveined
1 tablespoon ginger-garlic paste
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
Salt to taste
For Biryani:
2 cups of Chitti Muthyalu rice
Water for cooking rice
2-3 green cardamom pods
2-3 cloves
1-inch cinnamon stick
1 bay leaf
1 tsp shahijeera
1 star Anise
1 mace(javitri)
1 black Cardamom
Salt to taste
For paste:
1 cup of fresh mint leaves
7-10 green chilies
1/2 cup of fresh coriander leaves
Curd 1 /2 cup
Instructions:
a. In a bowl, combine the prawns ginger-garlic paste, red chili powder, turmeric powder, salt, and lemon juice. Mix well and let it marinate for at least 30 minutes.
b. Mean while Wash and soak the Chitti Muthyalu rice for 30 minutes.
c. In a large, heavy-bottomed pot, heat vegetable oil over medium heat.
d. Add all garam Masalas sauté for a while, now add marinated Prawns cook them without adding water on low flame for 15mins by covering lid.
e. In a jar add mint leaves, coriander, Green chili and curd and make fine paste.
f. Once the prawns are cooked add this paste until cook for few mins until raw flavors goes.
g. Add water and cover the lid bring to a rolling boiling, now add drain rice here I am taking 2 ½ glass of water for 1 glass of rice.
h. Cooking the rice up to 70-80 percent and reaming cooking on dum by placing iron tawa under the pot.
i. Drizzle the Ghee over the rice and sprinkle with reserved coriander and mint leaves.
j. Seal the pot with a tight-fitting lid or aluminum foil to trap the steam.
k. Cook for 10 mins on high flame and 5 mins on medium flame, to allow the flavors to meld and the rice to finish cooking through the steam (this is known as "dum" cooking).
Gently fluff the prawn Donne biryani with a fork and serve hot with raita or a side salad.
