The big takeaway for me is the fermented milk has zero saturated fat. This is fantastic for anyone with heart disease wanting to cut out saturated fat.

Saturated fat is not the culprit in heart disease. Precision fermentation has just achieved producing animal and milk fat, so PF can make a real milk.

Bored Cow…READ THIS!!!! the most brilliant niche for PF (according to me ;) is pet food - I’m sure you - being a fellow mensa member - would agree that it is beyond ironic that pet owners feed their animals; pigs, chickens, cows, fish and all sorts of other sentient beings as they think their animals deserve the best life possible - one of these PF companies needs to exploit this HUGE opportunity! Pet food that is not a source of animal cruelty and/or animal death!!!!

@@xaviercopeland2789yes in the natural world - there’s nothing natural about our cats and dogs we creates these breeds - there’s no need for pigs, chickens, cows etc. to suffer and die on their behalf, when they can get the same protein through precision fermentation, with a much smaller environmental footprint

mine animal free dairy milk (strive free milk) tastes sour, but it says the best before is after 5 months, so does the fermentation is making is sour? cuz I don't like the sour taste, I also bought 6 packages, what do I do?!

do we really want our “cows” milk beverage made from soybean oil? Same as mayonnaise? Can a different oil be used to add the fat content and not a highly processed seed oil?

Choosing the chemical composition of the fats used and the beta-casein distribution A1A1, A2A2 and A1A2 are choices that must be made and made clear to the consumer if this is going to get traction. Unfortunately we don’t have clear information on what’s best. Use of highly processed seed oils was once considered to be a healthy option is now not so clear. Profit maximization and cost minimization often conflict with what’s best for the consumer’s health long term. We have to cobble together opinions in a conflicting landscape of disinformation and misinformation.

It's still hard to call it a milk. Instead of full protein profile, there is only whey in the ingredients list (and we don't even know which whey fractions are there). Substituting milk fat with highly processed sunflower oil was a terrible nutritional decision, a profitable decision though. It looks rather like an another good for nothing supplement. Precision fermentation is a very promising method of food production, but there is still a long way to create a good milk substitution and there is a need for very strict standards of production.

A great start. For me the issue is sunflower oil. Disastrous stuff for people and the planet. Is it possible to use a better alternative, maybe oil oil?

Can you elaborate? Rapeseed and sunflower oils are always at the top of the list for environmentally friendly oils. Sunflower seed oil is also regarded as healthy, around with safflower, corn, canola.

Nice! My question: could this also serve as a basis for cheese? Not the cheap plastic-like factory cheese you buy at large chunks, but real cheese like Camembert, Roquefort etc. I guess the rural cheeses also get a lot of taste via the plants eaten by the cattle (other than grass, like herbs). This could be a real game changer.

Yes, absolutely! There’s a number of companies working on cheese and it should start coming out next year (and over the next few years!) Cheese is also the one I’m most excited about.

They use sunflower oil in this first version. I don’t know how that compares to other oils/fats for Omega-3 and CLA.

@thetechnivore fats typically can be inflammatory anti-inflammatory or somewhere in between. I highly recommend researching essential fatty acids and non-essential fatty acids. Unfortunately, far too many processed and even lightly processed healthy foods have very high levels of omega-6 seed oils. If you rely too heavily on these foods as a "balanced diet," then your body becomes inflamed. There is a glaringly obvious connection between inflammation and disease. Unfortunately, the US is more interested in food profits than consumer health

I eat lots of fatty foods everyday and I’m skinny. Once a week I eat 7 or so strips of bacon for dinner. Milk or anything without fat is what makes you fat ironically as it needs sugar/carbs for it to taste good. And sugar messes up your insulin levels telling your body to store any energy as fat even if your levels are fine. That is the circle of obesity
