Pink Velvet Cupcakes | Valentine's day special 💕

A special treat to make for your valentine! Pillowy soft Pink Velvet cupcakes topped with classic Cream Cheese frosting. These cupcakes have a moist crumb and beautiful pink hue. Unlike regular red velvet cake there is no chocolate flavor, a classic velvet cake with a twist!
Ingredients:
Pink velvet cupcakes (makes 16 cupcakes):
1 1/3 cups (170g) cake flour
3/4 cup (150g) granulated sugar
1/4 tsp salt
1/2 Tbsp baking powder
1/4 tsp baking soda
6 tbsp (85g) butter unsalted and softened
1/4 cup (120ml) vegetable oil
1/2 cup + 2 tbsp (or 10 tbsp) (142g) buttermilk room temperature (can be substituted with 9 tbsp milk + 1 tbsp white vinegar)
3 large (142ml) egg whites room temperature
1 tsp pure vanilla extract
6 to 8 drops pink gel food coloring
Cream cheese frosting:
1/2 cup (113g) unsalted butter
8 oz full fat cream cheese softened
1/4 tsp salt
1/2 tsp pure vanilla extract (optional)
3 to 4 cups (375g to 500g) confectioner's sugar (add depending on preferred sweetness and piping consistency)
