December 15th marked one year I have been on a pantry challenge 😁. I am still loaded up on canned & dry goods.

As someone that watches a lot of homestead, pantry, gardening, canning, self sufficiency, and budgeting videos (and an active doer of all those things) I'm surprised more cash budgeters don't address the importance of a well stocked pantry and the things that go along with it. Anyway, your food in jars are beautiful!

Hello! Homemade vanilla is super easy, get 3-4 whole vanilla beans, slice down the center of bean and place in vodka and let it get to know each other... :)

It's been one of the things I have always thought of doing, but haven't done it. Super excited to try my friends. I do love my vanilla from Mexico...it is so yummy. I am not going to need any vanilla for a few years. LOL

I just love your canning shelves! And, your freezers! I’m jealous. I have 1 upright freezer and would love another one. You are set up very well for this challenge. Last weekend, I defrosted my big freezer and while doing so I logged everything on a pantry challenge inventory sheet from Suttons Daze. It feels good to know exactly what we have. I’m keeping that sheet on the freezer and as I pull something, it gets crossed off. It was tedious and my fingers were numb….😂….but, it makes it so much easier to plan meals. Thanks for sharing your pantry!

I saw that sheet on Suttons Daze and love the idea of a pantry challenge inventory sheet! I want to create a list of my goals for canning and how much of everything I want/need. In the past I have tended to can too much so small batch canning will be my main goal this year. 😁

You should try the cream of onion in a casserole, Devine! Ball has a terrific strawberry jelly to can, simple recipe

I don't think I have ever had cream of onion! Yummy! Thank you for your recommendation on strawberry jelly! It is on the list to can this month...get those strawberries out of the freezer!

I'm looking forward to your challenge again this year. I use my home canned ground beef in chili and pasta sauce (especially when making lasagna). Not so much for tacos, although in a pinch, it will do. I love the meatballs, though. I have some beef stew that I canned in 2021 that I need to use. That may be supper tonight. I enjoyed the tour of your pantries and freezers. I would love to see one of your moose dishes.

I will use up the canned beef in those items but i won't can it again. We just don't enjoy it. I love the idea of having shelf stable meat but if we won't eat it, it is a waste. I love so many things canned. I want to get more soups, stews, meal in a jar type things canned up this year. I really want to do the burrito in a jar from Suttons Days... it looks so yummy. 😁😁 I will try to remember to film something with 🫎.

The heavy cream is almost gone...my hubby loves to have a treat of heavy cream around the holidays for his coffee. There are only a few tablespoons left now.

Haha, I love that one! If you watch my pantry tours from the past couple years that freezer was packed to the top! I am so happy we have gone through so much of what was in there. We still need to work on more and then I can restock what we actually eat.

I am the same way. I no longer can with meat in my sauce but instead pour it over meat. I also will just make my sauce the way I like and can it at the same time as official sites. I am dumping about 8 quarts that I just don't like the flavor of, following an official recipe. When I make spaghetti sauce I always make it fresh as I think store-bought is too sweet. I will just make it and can it next time.

It’s a shame to dump it but I understand! I will add mine into other recipes and get it eaten. I often buy store bought sauce but I add lots of other ingredients to it. I hope to have enough tomatoes to can salsa from my garden this year, but that is a high hope.

I love your canning shelves! If you haven’t canned jam before I would just use a box of Sure Jell and follow the recipe on the box. Then water bath it for 10 minutes or 15 minutes if your altitude is over a 1000 feet. And something my grandchildren love is strawberry rhubarb jam. They love the tang that the rhubarb gives the strawberries. They also love when I make homemade pop tarts with it. That would use up some of your rhubarb too. Sure Jell has a recipe for it on their website. I like making strawberry preserves. It’s just 2 cups of strawberries, 2 cups of Domino sugar and 1/4 cup lemon juice and cook it until it doesn’t run on a frozen plate. Or you can use a candy thermometer. I think the temperature is 220 degrees. Have a great night!

Thank you so much Mary! I have canned jam, just not strawberry as I normally do my grandma's freezer jam. I have done raspberry freezer jam as well as strawberry rhubarb freezer jam. I just need to get those strawberries and rhubarb out of the freezer and get making jam! LOL Thank you so much!

I love your pantry! My mother and I made homemade strawberry jelly once, it was the best! I'm pretty sure it was the recipe that was on the canning book, I remember it just took sugar and the fruit pectin and that we heated up the strawberries on the stove.

We don't do anything special with our grease. I do know some people strain their grease through cheesecloth.

I'm curious, I come from a large family of hunters. I've tried a lot of things, but what does moose taste like? Do you prepare it like Venison?

Yes we do. It is richer than elk, antelope or venison. My favorite wild game is elk but we were so happy to get the moose. We won't be hunting any time soon with my hubby's schedule, but I am hopeful I can talk a friend out of some of their elk. Hahahah! Hunting is huge in our area.
