We are a licensed cheese-making creamery and dairy goat farm in southern Vermont operating to the United States Federal Grade-A standard. As such, I would like to offer some clarifications and suggestions to you folks. First, we are not permitted use any wood, fabric based cheese cloth or any other porous materials, as these can harbor lots of bacteria. We dry and age our cheeses only on NSF food grade stainless steel racks that are sanitized with a 100 to 200 ppm solution of food industry bleach for 60 seconds just prior to use. The wet racks should NOT be wiped dry or they will no longer be sanitized. We do however, shake off as much liquid as we easily can. Don't worry, the bleach will be neutralized as soon as it makes contact with your cheese. Wash your hands very well or wear surgical gloves before you handle any cheese. We either wash up with Betadine pre-surgical scrub, or use anti-bacterial soap followed by a rinse with a Chlorhexidine Gluconate solution. If you don't have these specialized anti-bacterial agents, just use soap and water, as it is pretty good at eliminating most of the bacteria. If any of our cheeses have developed mold prior to waxing, we wash them with a saturated brine solution using a soft sanitized brush and make sure they are good and dry prior to dipping. Drying might take up two or three days for a cheese that needed to be brine washed, or just one or two days for one that was fine. In any case, the cheese exterior must be dry or it will develop a mushy layer under the wax. Also, our cheese is at room temperature prior to dipping so it does not develop any condensation on the surface from being cold. We heat our wax to 210 deg F and hold the cheese for about six to seven seconds in the wax during each dip to kill any bacteria or mold spores (always wear surgical gloves to prevent a potentially bad burn). A wheel, for example, will be dipped four times: first flat face, the other flat face, half the disk like the letter "D", then the other half disk. The wax preserves the cheese by depriving mold of Oxygen and preventing moisture loss of the cheese interior. By the way, the waxed cheese must be turned at least once a week to prevent moisture pooling at bottom of the wheel or piece. Good luck and have fun with your dipping!

@@LoremIpsumSemper1 You should turn the cheese once or twice a week until you consume it. Moister cheeses need more turning, dry cheeses less. Clearly this could go on for years, but waxed cheese is meant to be consumed usually in a matter of weeks or months, as it does not continue to age like a natural or washed rind. When you buy a 5-year old cheddar for example, it was aged first and then waxed just before being sent to market.

I've just been strolling around KZbin and came across this channel. In under 10min and without even knowing. I've just came to the conclusion. That I've got, huge respect for the man running this channel. Just for that one little act of compassion hope trust and honesty. All rolled up in one kind act. For others to hope to win something. Thanks AP! I'm going to try this. 😊 Notes: Leave cheese out 24 hours on wood. Clean with distilled vinegar. Freeze for 15 minutes before wax. 1lb of wax will cover up to 10 lbs of cheese. 2 lbs of wax for 10 lbs and more.

😯 I never knew that this was possible to do at home. So much cheese has been wasted in my home because we only knew about freezing and refrigeration. 😔 My mother is from the 50s where convenience and automation was becoming big. She never taught us about preserving foods. I am learning those skills now as an adult. I learn so much from this and other channels from people who live out in the boondocks and have these awesome life and survival skills. I never knew this was possible for long term storage of cheese, and I enjoy preserving all types of food. As a tidbit, I picked up what my Belgian landlord called a cheese safe/box when I was stationed in Belgium. It's about the size of a single handled ice chest with two wooden shelves, a door on the front, and screening material all around it for air flow. It makes perfect sense now that I've watched this video. I've already ordered two pounds of cheese wax and I dug out my cheese safe and put it in the basement in anticipation of making my first batch of shelf stable cheese. Thanks for the great video.

I would love to see a picture of the cheese vault/safe you have. I cannot find anything like you describe on Amazon or just searching online. My Belgian ancestors that came to America in the 1850s must have known about what you describe, but I have not been able to find an image. Do you know what it is called in Flemish?

I got tired of throwing cheese out, big blocks I was buying from Costco. I remembered back in England that I would wax the cheese. So I got red wax cut the cheese block to 4oz sections dipped 4 times then wrapped in parchment and zip lock bag put in refrigerator this cheese easily lasted me 1 1/2 years. I already used sharp cheese so I didn’t want it to mature I just waxed it and put in fridge to last without molding.

I've done cheese this way for many years always with great outcome. However, out of or personal hesitation I've never done the pepper-jack because of the peppers so I am Really excited to see how that turns out. You are so generous with your time and energy, Thank you. I know you like the black wax but traditionally each type of cheese had its' own color because the blocks of cheese were all the same size , to tell them apart.

I am 83 and have canned, dehydrated, pickled, frozen all kinds of food . ~I have for the last 3 years have watched utube I am totally in love and have learned so many things . I have canned so many different things I've been having a blast. This video is awesome I'm going to order some wax to do this . I use small white price tag stickers, write the cheese and date on it, after the last wax dip I put the sticker on as it hardens. I've done mild and sharp chedder, asiago, pepper Jack and Colby. I think I've gotten as far as 5 years out, opened and might be a little dried out on the edges but good. Good video.

Brilliant. I have waxed cheeses before. It is a wonderful way to preserve. The different colors are for different reasons. But My cheeses were in a place we could not stay at a regulated temperature in the summer. So I lost my supplies. It was an amazing way to preserve the cheese. Canning the cheese was wonderful too. I LOVE CHEESE!!! I usually eat about 12 pounds per month. I buy it in 4 pound blocks at my local store and usually use about 3 of those per month. I realize that is not very healthy, but what can I say....I guess I'm addicted!! I will definitely use this method. This has actually been one of my major concerns, and is the whole reason I have my Nigerian Dwarf Goats ....so I can get milk, cheese and butter!!

A few years back one of the TV channels ran a series called doomsday preppers. One of the women on there preserved cheese this way. Just goes to show you can get pearls of wisdom from the most unlikely places.

I am not a prepper, but youtube suggested this video, and I did not know you could store it that way. I would do this, just because being older I get tired of wasting milk and cheese. I use powdered milk for my food so I don t keep dumping milk down the drain, and doing wax like this for cheese is something I may try. God bless.

They used to use a medicated type wax ( maybe menthol or eucalyptus in it) melted for people who had arthritis in their hands and elbows. When they dipped in their appendage, the warm would be locked in next to their skin. After the therapy, they would just peel off the wax.

I bet it probably helped those people with pain, inflammation ect. Now with Big Pharma pushing pills, the remedies and treatments of the past have largely been ignored or forgotten.

My grandmother did that. She bought the paraffin wax like they use in salons to dip hands in and the warmer. She bought the oils to add from walmart. It worked great for her advanced arthritis. The warm wax felt great alone and worked wonders when the oils were added. Plus it's great for your skin. She would pull her hands out of the wax she would have my pawpaw put a plastic bag on each hand. She used old bread bags. Then he wrapped a hand towel around each hand then wrapped in foil. I guess she wanted to have the heat last as long as it could. They also were so careful with the heavy duty foil and they reused it over and over and over... These are great. You can use it as a slow cooker also. So once you cook you food you can keep it warm. I am on a budget but I buy things that cook faster and could save me money when cooking.

I wrap my cheese in fridge with paper towel & apple cider vinegar to save & works great. Just a month or weeks. Grateful for this info, have lots of cheese, need to save. 👍☺

Thank you AP for the cheese video! I am going to do this! When I lived overseas many years ago there were fairly high concrete/rock posts stuck in the cellar floor; my neighbor told me that's how the Swiss preserved 200 kilo rounds of gruyere and ementaller,etc. and the rats would fall off of the posts trying to reach it! Sometimes it gets crazy busy and I've been ill and got hurt; explaining, not complaining!😊 I am totally ignorant of electronics and little knowledge of smartphones, etc. I don't even know how to email! Thank you for posting this. I knew my elders did this but it was one of the very few things re: food prep for the lean times that l didn't learn growing up. Much sprue and I paying asking your videos to all three of my adult kids (who also prep ) thanks again !!!

The cheese will continue to be sharper with age. Cheese is sold by the lb so it has a lot of water in them, make sure you air the cheese out a bit to remove excess water. Storing cheese is a great way to keep cheese on hand.

Alaska Prepper Thankyou ever so much ☺️. You’re channel is perfect. Living in the U.K. I just know when SHTF the whole country will be gridlocked so I’m preparing at home. And you have given me so many ideas/information that I didn’t consider like this cheese video I had no idea (silly I didn’t realise) that bought cheese can be prepped. That’s just awesome. I’ve learned some of the medicinal plants and their uses and used them on myself first to make sure I’m not going to hurt my family etc. Such as the Romans’ used comfrey to heal broken bones, willow tree for pain relief. I just love learning ☺️☺️☺️

I like clear wax because I can see any problems, such as mold or other discoloration, starting so I can salvage the good cheese. I keep the cheese out of the light, so I don't need a dark colored wax.

This video have me a bit of a wry smile as pretty much all the high end Cheddars here in the UK come coated in Wax. It has been done over here for hundreds of years. One of my favourites is a Welsh Cheddar called Black Bomber. The wax on it is black hence the name. There's also a cave aged Cheddar I love that is also waxed. This is an awesome prep though. It has reminded me to throw another dozen waxed cheeses into my preps. Thanks for the great video.

Yea Americans don't care about saving anything, so we have a throw away culture, hence why things are not packaged to last like in the UK.

@@funsizedi88 we don't have a "throw away" culture in my family. I am American. My mother grew up in a Foster home during the great depression because her mother could not afford to feed her. We have always saved and washed aluminum foil zip lock bags left over night, canning I think when you speak for Americans you should speak for yourself and not all of us

Your way is so much more cost effective. I was just yesterday looking at old school cheese making. I am still going to learn old school. I think it will be great for bartering. Now I know a great way to stock up on my favs.

You could also buy wax stamps like what you stamp envelope wax. PJ for Pepper Jack, C for Colby etc.

I like the idea of dipping smaller pieces since it needs to be refrigerated or eaten quickly after opening. Important to remember that several small pieces will require more wax than one large of equal weight.
