Yesss! Build more work places without increasing population! Cripple your economy by having whole branches of it out of employees! Feel the power of sarcasm! Oh, and I believe town square functions as a road, thus you can integrate it in road network instead of surrounding it, saving much space. Also hawing builders top priority will most likely mix workers between jobs every time you build something, thus loosing profficiency (as your master mason will become apprentice woodcutter) and crippling economy further.

So the one thing I have trouble with in my plays of the game is not having enough pesants so try to keep a good number of idle pesants especially for when you want to build something that way workers won’t lose their skill (for now I recommend like 5-10)
