Swapping seats out might be a thing. I put a set of cheap 'ebay style' racing seats in my stock car and was surprised how little room there was. Even without racks, and the seats sitting right on the floorboards I was looking through the top of the windshield. In order to get my head down I had to slide the seat forward and tilt the seat back pretty far (and cut out a support bar for the top of the actual racing seat). When I got the seat slid forward and laid back just right, I lost about 1/2 of the door opening to get in and out. And the seat is very close to the steering column spines. Bad part Is I'm down to 5'6" after compressing my spine 2.5 inches. If you're taller than that by several inches, it might be a PIA getting a seat setup to your liking. My car is one generation newer than yours though, but I think we still have the same 50's Ford floor pan.
