THANK YOU!!! I have been making sugar cookies with royal icing for years now and I never can get my base icing firm enough without adding extra powdered sugar (making it a little too sweet). Turns out, I'm not mixing it long enough. Also, I love how you leave in mistakes and show how to fix them. A small tip for you though, for the stocking, start with red next time. Then do the white with sanding sugar. That way there is no gap between the colors. Also, for the snowman's nose, you can just make a big orange circle and then use a toothpick to pull it out in the direction you want to make the point. :) Love your videos! You're fantastic!

I would like to suggest a tip I learned from Alton Brown. When adding dry ingredients to a mixer of wet ingredients, use a cheap bendable paper plate. It's a lot less messy. Thank you.

The best part about royal icing is that you can swirl and blend colors like an artist. I always let people know I need to have at least 1 week to complete my creations. It is very labor intensive. I also use meringue powder, and can refrigerate the frosting to continue the next day. I’m not sure if you can do that with egg whites. Also I use a dehydrator to firm up the frosting on the cookie when I add layers. Great starter & Informative video, John! 🎄

I found that the egg white royal icing survives the fridge much better than the meringue powder. I also found that the egg white icing was smoother.-I use a knife to spread the icing. Not sure this year they’ll be cookies, usually I made a few dozen gingerbread cookies.

John, I have been making sugar cookies with icing since I was seventeen and I am now 41. I used to make such runny icing or I would make vanilla buttercream which is too thick. Watching your royal icing tutorial is great and life changing. I got this Christmas already made up icing for cookies. It was too thick so watching your video I would add a little water and it made the perfect flooding consistency. Thank you John. You are an amazing man.

I remember we had a cake decorating class when I was in girl scouts. That was about 50 years ago. We practiced on graham crackers. The icing was made of crisco, powdered sugar and food coloring. How I thought that was yummy I'll never know. I always thought that was Royal Icing. Thank you for showing how to do it right. 😋

What?!? I was a Girl Scout about 45 yrs ago (I still have my beret though some moths did a slight number on it, lol) but we didn't get to do a cake decorating class 😔 I did learn to bake in my Jr High's Home Economics class though. I had some great recipes but unfortunately I lost them. I had one of thee best sugar cookie recipes I've ever tasted. So sad it's/they're gone but grateful for the memories of both those yrs in my childhood...

@@jackybluj Yeah that's another one we didn't do. We did several outdoor activities. Camping, they took us to one of California's largest Zoo's, went to the beach. One of my fondest memories was the gathering at a huge city park after our yearly cookie selling where all troops from California attended. Again, lots of outdoor activities to participate in as well as learning which troops made the most sales...

You're so much fun to watch! One thing: I'm a teacher. That's scraping the bowl down. Tamping is applying pressure and compacting something, which I believe is not what is wanted when mixing, particularly using egg whites.

They look so adorable!! I'm so near my due date I'm not sure I'm going to be baking this year. I usually make a big batch and decorate them with my step son. They make great presents from a child to aunts, uncles, and grandparents. Last year he asked to give some of them to his friends! I found it adorable. Perfect timing! My kids and I are doing cookie ornaments (non-edible gingerbread) and decorating with 3D paint. We will be making edible ones soon and the ornament decorating is perfect practice for royal icing.

When I was a kid my mother made cut out cookies, dozens of them. However when we frosted them we used just powdered sugar and milk frosting and frosted the cookies on the bottom side. They were much easier to frost and ended up being very neat. 😃

Sometimes I just use white on all my cookies. After they set, I add gel food color to a color pallet and use a high proof alcohol to "paint" on what I want. It leaves no alcohol flavor. It also looks very similar to a water color painting if your inro that. I find it much easier to decorate with the kids that way.

The toughest thing about royal icing is working with it before it dries. But when the right consistency, you can actually just smooth it on with a knife. Did you try it this year?

I just love watching your videos, always so funny😄 Here in Peru it's actually not very traditional to make Christmas cookies, or even bake something, so people here in Cusco don't own oven. Everything we want to bake, we bring to wood oven and pay for the service. I made my cookies in the pan and it worked great (just had to flip them like pancakes😂). I've tired to make royal icing many, many years ago but it only came out once. I was also taught to use meringue powder. I've made your easier royal icing with corn syrup twice last year and I loved it. I've got leftover egg whites in my fridge from your German Chocolate frosting that I've been saving. I'm definitely going to try it again. You gave a lot more details and tips. BTW, your German Chocolate frosting is amazing! I put it on top of your brownies and people love it. I'm about to start making your Banana Cream pie. I'm so excited. Love seeing your husband enjoying your cookies lol. That was cute.

I'm not scared of royal icing any more. Thanks John. I used my oven on 50 degrees C to dry out the icing in 15 minutes. Turn the oven off as soon as you put the wet cookies in the oven though! Leave in the oven for 15 minutes and hey! They are perfect!

You can also buy powdered egg whites. Works just as well.

Thank you!!! This is the first time I’ve ever been able to do this!!! I’ve watched so many other videos and used recipes that never worked. This was perfect!
