When my brother and I were kids my family didn't have much money. Our mom couldn't afford real ice cream sandwiches so we made them ourselves using graham crackers, vanilla ice cream, and wax paper. They weren't real ice cream sandwiches but to us they were perfect.

This was a great recipe! But I’m going to mention two things if anyone decides to try following along themselves. 1) Lay out the 2 eggs and unsalted butter immediately. They need to be room temperature and the video doesn’t mention them until you’ve gotten to the point you need them. 2) If you need to put your cookie back in the oven to soften the butter holding the parchment, let it cool again. If you try flipping it right away it will fall apart. Either let it cool again or extend the parchment paper to give you a way to safely pull the cookie out. It’s a lot less stressful that way.
