I want to get into canning and dehydrating. I know the initial cost of purchasing the equipment will be somewhat expensive but I know over time it will pay for itself. I have been saving my Classico red spaghetti sauce jars as they are mason jars and the threads match the canning lids. It’s a matter of getting the rest of it now. I’m so excited to can and dehydrate. My mom used to can a lot when I was little and my aunt cans as well but she does the oven method. I’ll get there one day. Thank-you for showing us all these canning videos. I love them. 🤗❤️🙏🏻 God Bless.

They have decent dehydrators at walmart for about $50.00. You could get started there if you cannot afford a canner.

Vlogging With Nina, I save my Classico jars too for canning . I also love the fact they are 24 oz jars - between the pint & quart . I find a lot of used jars @ yard sales & for 20 cents a jar @ Goodwill thrift stores .

Good morning, Bev! I've got 10 lbs of Yukon gold potatoes in dehydrator right now. Few days ago did 10 lbs russet & 8 lbs carrots. All those carrots only came out to 1½ cups in my quart jar so will get more to top it off. I thought of you & your garden with all the peelings sitting in my sink, wished I could mail them to you for your compost pile. Thanks for sharing. God bless you, Howie & Gracie. ⚘

@@lynnheffron6905 and that’s the reason I dehydrate, also my jar collection is not as abundant as I would like.😂 We have dehydrated a 50# bag of white potatoes in diced and slices. We also have red potatoes to dehydrate but haven’t started them yet. There’s 4 adults to feed but I’m doing as much extra as I can because I worry about the state of the economy and we are retired so we live on a fixed income.

@@villagesteader3552 I hear ya on the jars, they're like finding buried treasure! Did get lucky & found 3 cases of qts & 1 case of pint, took almost 2 years to find them. I can only manage 5 lb increments to lift as I use walker/cane to get around so must do everything 1 handed. Retired on tight fixed income but it's only me to feed so don't need as much preps. Prices get higher each time I shop which is about every 5-6 weeks, but guess it could be always worse. I don't eat meat, bread or milk so things are a lot easier for me . Really feel bad for those who aren't putting food side for when things get worse. Hope you can find more jars! 🙂

@@lynnheffron6905 nice score! My husband helps me a lot. I do hope I can find more jars as I have 8 quarts of wild blackberries that I want to turn into syrup before Christmas. I bought really cute bottles for the syrup but you can’t can in them, so when I give the canned syrup I will give a bottle to decant it into. Listen to me going on and on…🤓, I feel we have a lot in common.

Yes, ma'am! You simply have to take advantage of produce bargains as you find them. I've canned and dehydrated potatoes for this winter and hope to grow enough potatoes this Spring to put up for the year. That's my plan and I'm sticking to it, LOL! Always shoot for the moon - You're bound to land among the stars, right?

Your advice years ago on making sure to boil potatoes few minutes before canning to set the starch had always served me well! Never any soft potatoes!I’ve even canned French fries 😁.

Make sure you get one that has a thermostat as well as the heater in the lid ( if a round one) Nescoe Or an excalibur type.

I recently canned my potatoes without blanching more than letting just them come to the boil because a long time YT canner said they turn our mushy. They turned out nice. Love your music!! Long time fan here. 😘 this is such a great way to store a harvest. My basement doesn’t stay cool for long once the furnace goes on.

For dehydrating I have found 6 minutes the best time. Love both my dehydrated as well as my canned. And I don’t blanch if I can. And they are wonderful. I also use a variety of herbs, my favourite is Fluer de Sel with chicken or beef broth

Your canned potatoes look lovely. I've only canned potatoes once and they were overcooked in the jar. Next potato sale, now that I've seen you do it, I will give it another try... I cut the potatoes to small and overcooked before canning.

Bev, In the climate we both live in. A cool cellar is so much easier for potatoes & carrots to store fresh dug. I almost never buy either if I do it right. Canning seems very labor intensive. But I do like the dehydrated ones you did, as it is easy to store in the pantry. Great video as always! 😊

I did 50 lbs yesterday and canned maple beans today..🤪 I am pooped!!! Speaking of lids..... I bought a Sh*t ton of lids this year. Went to use them canning the beans and the lids are too big!!!!! They're not wide mouth. They're Gem lids??? I am pretty P. O. 'd !!

Mine is a Mueller brand one from Amazon. Same type, different brand. I've had mine going on 5 years and it's still going strong. Much heavier duty than most and they run in the $20-$25 range!

@@lpschick7237 you can't go wrong with either chopper. I just think the Meuller brand one is a little heavier duty. If you look at both of them, the Mueller has a thicker plastic on the top part and it has like a waffled bracework in it to make it strong. I believe they are in fact like $5 off on sale on Amazon right now!

In a tea room chat, or another canning video, will you talk about the type of potato you can (ie Yukon, red, little bagged russet, big(er) baking potato russet), the rationale you use when making chop-size decisions, etc...I realize that the freshest of the freshest is ideal but sometimes there are some killer deals on 5-15 pound bagged potato which are at different stages of aging; well, up until at least a year ago. Are there some do's, don't's, or advice about canning these super sale potatoes?

As I haven't done potatoes as of yet, why do you have to par boil them first? I've never understood why you do this! On the cubes you did for dehydrating, could you can that size? I've seen in like store bought hash, the potatoes are quite small like with the smallest blade....could I make some that size for my own hash? Sorry for all the questions but I want to understand the whys of the process before I do them next week.

I got a MUELLER brand chopper from Amazon. Same type chopper, different brand. Much more heavier duty than most in the $20-$25 range. I've had mine 5 years and it's still going strong! Very high quality.

If you look at the top part it is thicker plastic and has like a waffled brace in the top part to make it more sturdy. I've had mine for about 5 years now and it's still going strong and I use it constantly. I can even do carrots on it! This is just my opinion as I'm sure both do the same functions. I just think the Mueller brand one is more sturdy. Either way you can't go wrong with either one of them!

I wouldn't....because you have boiled them to set the starch...so using fresh water is better

They just keep putting potatoes on sale. I have most of 10 lbs to do (some went into the air fryer). The New Ball Complete Book of Canning has an interesting version of canned potatoes - actually 3 of them. Can the spuds with herbs and broth. I notice they reduced the times for the potatoes - don't know why and don't know that I would follow that over the nchfp. If you don't want to buy the book, (and I found a lot of it underwhelming) try your local library.

Forgot - the reason I found the Ball recipe so intriguing was that there was no par cooking the potatoes first - just put in jars with the herbs, spices and broth, seal and can. Not that I'm lazy (heh, heh).
