I agree, The main different is a way to confirm the pressure in the pot, wheather you use a dial gauge or a jiggler or both, this is a way to see that the pot is creating the needed tempurature to sterilze the contains of the jars. My only issue with most KZbin discussion / video on this issue is that they sometimes lump in the older pressure cooker that have a jiggle as only a pressure cooker only. Yes modern Pressure have what I call a twist close vents and are not safe to PRESUURE CANNER because that valve is not regulatable, You do not know what the tempurature is at any giving moment. So theoretically speaking, if you get a weighted gauge for a pressure scanner and use it on a pressure cooker it should be okay?

Hmmm, good question! I have never heard of anyone doing that, so I recommend calling Presto (or the company that manufactures the device) and ask that.

Exactly. some pressure cookers do have a gages. Its all a sales gimmick that people get sucked into, instead of using common sense!!

@@lottierenwick8789 very interesting! Are you referring to ones that are called "pressure cooker canner" or something similar? Because you can technically use all pressure canners to pressure cook, but some devices are only made for pressure cooking. I do love that all that I have are both pressure cookers and pressure canners.

This is confusing! I'm in the UK, my pressure cookers do have a pressure weight that can be used as 5lb, 10lb or 15lb pressure I've had this for over 50 years. The only reason that I bought a pressure canner was the size so that I could fit more in. Recently I watched a young woman, her channel is Fy nyth and she used a different canner that looked much easier to use than any other that I've seen.

Me too. I can set it at 10 and 18. So can't see what the difference is just got to be aware of the timing.

What do you base your your comment about not using a pressure cooker for canning where are you getting that data from or is it just hearsay? Pressure is pressure time is time what's the difference? And I do have a friend who uses a pressure canner every year for the 12 years that I've known them it's their number one tool in their kitchen. And if I recall correctly some of the new instapots also will can how do you explain that?

Thanks for your comment. Pressure cookers don't have weighted gauges on them, which is needed for pressure canning. This helps to regulate the pressure. You also need to use the right amount of pressure based on your elevation, and that's not possible with a pressure cooker. Having said that, I have heard that you can use something like an Instant Pot if you are at a low elevation - less than 1,000 feet if I remember correctly. I haven't tried that because I'm at a high elevation. You can use any pot for water bath canning, but you can only do that for high acid foods.

So the more I read the more confused I get!!! I have a Red Mountain 23 quart "pressure cooker" that has a guage and pressure weights. I'm of the same opinion the "time and pressure" are the determining factor.🤔🤔🤔

Did you mean "your friend used a cooker or canner for 12 years?" We bought a 23 qt Red Mountain labeled "pressure cooker" that has a guage and weights. Been canning a long time and didn't pay attention to the label on the box when we bought the new one. We're trying to make sure this will pressure can for us safely. I'm writing this while our chicken is in the pot at 10lbs on the guage and the weights are jiggling! Hope I'm not wasting our time! I'm of the same opinion, "time and pressure" is time and pressure!!! Help! 🤔🤭😅🤟👍

@@victormcox Cookers are usually small, around 4 to 6 quarts. Your Red Mountain is a canner. Follow the instructions for the amount of water and then look up the pressure for your elevation. If you don't have the instructions then look inside your pot for a line between 2 and 4 inches. That will be your water level. Then lookup your pressure in your Bell canning book. Enjoy the process.

Yes! Technically mine can be used as a pressure cooker, but the size is large enough that I likely wouldn't use it that way. I also have an Instant Pot, so if I want to pressure cook something, I use that.

Question...I have a large Canner....Can I put the Item to be cooked in a separate open container to be cooked, or does the Pot Roast need to be in what amounts to be a braising liquid?

Hi Matthew, thanks for watching and for the question. If you are wanting to cook (vs. can) the pot roast, you can definitely put it in a container and cook it that way. You can also put it in braising liquid. Either way will work. Now you do need to have some liquid in the cooker in order for steam/pressure to build. Consult your manual for the required amount of liquid. Hope that helps!

My pressure cooker has a pressure gauge and all the bells and whistles of a scanner. Update your knowledge. There are tons of pressure cookers out there now a days that have the gauges in order to properly can safely.

Thanks for your comment. There are indeed digital pressure canners, but they are still different from pressure cookers. The gauges are what make the difference between the two, and it's important for people to know not to use a pressure cooker that isn't intended for canning as a canner.

Great question! You need a pressure CANNER. Be sure that whatever you buy is a canner and also that it's a pressure canner. (There are water bath canners that are fine for jelly, fruit, etc. but not for vegetables, beans, and meat. This is why you need to make sure it has both the word, "pressure" and "canner" in the name/description.

@@angelissaa1819 thanks for clarifying. As long as it is listed as a canner, that is fine. You can technically also use it as a pressure cooker. The difference is that there are some pressure cookers out there that look very similar, but are not listed as canners. They are only listed as pressure cookers. Don't get one of those. But one that says pressure canner/cooker should be absolutely fine. I hope this makes sense!

I agree. Unfortunately, they are WAY more expensive than they used to be. They will last a very long time, so are a good investment, but it's hard to cough up that much cash for a single item.
