I've been wondering how to season my peas, beans, and greens, without access to fresh meat. I like bacon, and we do use it occasionally, to season, if we're short on ham or side meat. I think this will do the trick. Plus, you get a little grease for frying eggs (if I have chickens) and potatoes. As usual, great idea ! Bobby

Hey girl, glad this popped up for me to watch again. I did this very thing several years ago. It does look funny, but anyone who try’s it never makes fun of it again. Every can I gave away, the receiver loved it. I loved it to. This is the only way I can bacon now. It taste great and crumbles wonderfully. The fat on it would really be welcome during a SHTF situation. Everyone should really study the ration system for Britain during World War Two. Fat was in very short supply.

It's 2020 now and that's about the same price I pay now for that seasoning bacon. It's a mix match of first uneven cuts and uneven lasts cuts and thin or thick cuts that didn't make grade and the chunky odd tails and edges that get trimmed when they cut it down to size. I usually get a half to a whole pound of good enough slices I can put to side to cook regular and the rest to chop up to season beans greens potatoes or whatever else you want to season with a little bacon.

I agree that using the ends and pieces is a nifty alternative to cut costs if you don't mind not having perfect little strips and just want that great taste of bacon. I really want to get my family's food supply more shelf stable and not have to worry about losing a bunch of food in the freezer in the case of a prolonged power outage so your video is a blessing to help with that.

Hi Bexar, I've been watching your videos for over a year. I'm reading and learning as much as I can. I have a question I want to ask, I would appreciate your opinion if you have the time. I'm handicapped and want to can foods for the times I cannot stand and make meals. I have canned some vegetables in my All American, did everything as I was supposed to, vented 10 minutes, let it process, etc. At the end of the process, I turned off my burner and left the pot to cool down overnight. In the morning, I checked and all my lids had popped and sealed, I removed the rings and all looks beautiful. Is it ok that I just let the whole pot depressurize overnight with the weight on and all? Thank you in advance for your time.

Love your videos! You have really motivated me to do more caning. I have question, do you have experience on canning sliced sandwich ham? I have many packages in my freezer and I'm really nervous about loss of electricity - I would like to transfer frozen ham slices in to jars for a long term storage. Would it be ok to use same method as for bacon, with parchment paper and 90 min on 10 pounds pressure? Thanks!

Thank you for your video. I have done both raw pack of ground beef without broth and with broth. When I did not use broth the top of the meat ended up dry with an airspace above it in the jars... Then I tried my own home made broth with the raw ground beef making sure there were no bubbles in the jars and left a 1 inch headspace and they turned out perfect. No problems at all... I do want to try this raw pack bacon as you are doing.

Probably not a water leak into the jars only possible to leak out of the jars. Bacon contains different amounts of water to increase the weight thus increasing their profits. They are fine to eat as long as in 24 hours the jars are still sealed. If not take out of the jars and freeze until ready to use. Blessings!

I must have have been having a bad day. Not adding water to uncooked meat is more about density and taste. Raw meat is a different density and adding water the temperature might not get high enough to process appropriately. Cooked meat is already cooked so the temperature doesn't need to be up as long. Blessings!

I've watched so many of your vids I can qualify as addicted to BexarPrepper! And I live in Oregon. Ha! I do have a question regarding the bacon canning. How can the bacon, fat and juice equal more than the bacon already there that you put in the jars at the beginning? You implied that if you added water when canning it might ruin the seal? Blow off the seal? Does water enter the jar while processing? I can't think it through, help please.

I have question, though. When I've completed the canning process, the outside of my jars seem "greasy" as if the juice or broth has leaked out. Does this mean I have grease under the lid? Is this bad enough that I need to use these quickly?

Could I pre-fry the bacon and then pressure can already cooked? I buy bacon in 10lb boxes (Sav-a-lot), and fry it all up at once. Then I put in in mason Jars in the fridge.and pull out a few slices as needed for breakfast and cooking. It keeps around a month that way. How handy it would be to pre-fry and can it for a 3 year shelf life...Nice Vid.

@BexarPrepper I have an 85 pound Lab mix I like to make sure he gets good things for him too Will try to get a video of him up soon. I think what we feed him makes his coat glisten like it does and he has never had anything other than fleas.. Well he does have genetic hip problems but that doesnt count

When I did the meatloaf thing I had a seal failures. After that I took a small piece of plastic wrap and put it around the edge of the jar and used my canning funnel on top of it. Then I carefully removed the funnel and the wrap. Then I wiped the rims with a soapy squeezed out cloth and then a clean one. No failures. Few extra steps, but I felt better about it.

Thank for the reply. I did give it a try today. (Had room why not?) I did not add water, because I wanted the crisp yet I think there is enough fat in it to hold. WE SHALL SEE. Be back at ya on my results in a month or two. Once again thanks! BE WELL and BLESSINGS BACK TO YOU AND YOURS.

This is a great idea. I dont use bacon very often but when I do I like the little pieces in casseroles or salads or beans or whatever. I have never seen bits and pieces here but I have never really looked for them but I will look next time!
