The digital pressure canner sounds like such a hand tool. I have a traditional one which I like, but you do have to watch it closely. -Cara

It is very handy! I did a lot of research before purchasing to make sure it is safe. Everything I have canned with it has come out beautifully. It is very convenient for smaller canning batches. I still have my regular Presto Pressure Canner. I'm excited to have both going at the same time this upcoming harvest season!

Hi, Jamie! I really enjoyed this video and have been thinking about how I could more easily can some of my pole beans from last year. Your video was just what I needed! You've also inspired me to plant more dry beans this year. Do you plant using the "three sisters" method using the corn stalk for support or do you use bean poles? Aww, thank you so much! I will definitely document canning bush beans this summer. We get so many beans and I have to preserve them (canning and freezing) since there are too many to eat fresh. Last summer I had beans (fresh and dry) companion planted with tomatoes. This coming summer I will rotate crops and have the beans on the exterior rows of the garden. I have never tried the "three sisters" method but the science behind it makes sense and the natives had it all figured out. Thank you for the support! -Jamie

I love my digital pressure canner! It saves me so much time that I used to spend on watching the canner on the outdoor stove. With the digital one I don't have to pay so close attention to it and can multitask during the canning session. I heard that this way of canning dry beans is not "approved" since the bean is so hard that the heat may not be able to penetrate through it and potentially cause botulism. Have you heard this?

I have read that this is "rebel" canning since the beans will expand during the processing time versus presoaking or precooking where the bulk of the expansion takes place ahead of time. We have not had any illness from this method (thank goodness) but I have had a few failed seals, which I am guessing is from the change in headspace and internal mass of the jar once the beans expand.

Hello! I had filmed all of the steps showing how to use the digital canner and had an error on my camera which deleted that footage. I will be making more videos with the canner in the future and plan to make them more of a how-to.

You didn’t mention how to set , because there is a heat jar mode that comes up that is done with lids off so how is machine set

You will need to know your process time before any heating in the machine can take place. The "Insert Jars" prompt is to the heat the jars with water before filling with the items you are canning. Once the heating of the jars is complete you will fill each jar with your canning item and secure with lid and ring. The next heat setting is to bring the machine up to venting, then processing. Do you can a variety of dry beans and can you use the same method?

Yes, I have canned white, black, red kidney, and pinto beans this way. This is a rebel process (not tested for safety) so proceed at your own comfort level. You can absolutely pressure can any dry bean using the tested methods which can be found in the Ball Canning book and online at nchfp.uga.edu/how/can_04/beans_peas_shelled.html I hope this helps! -Jamie

They're great! They're already cooked so just drain, rinse, and heat up as a side or in a recipe that would normally have canned beans. We add salt to taste if eating it as is and it's perfect! My favorite use is to make white chicken chilli in a crockpot with them. Very delicious! -Jamie

The warming part is when the pot has water to the line and jars are filled halfway with water. This time will heat up the jars and water in the canner to prevent temperature shock when adding in the hot water over the beans and when jars go back in the canner. -Jamie

I have never done that since I always drain and rinse the canned beans before heating them up to eat. Broths and stocks are processed for a shorter amount of time than dry beans, so technically it would work very similar to how canning soup works. I hope this helps! -Jamie
