I’m so glad you posted this. At Walmart yesterday, canned Mexi-corn was $2.97 and I refuse to pay that so I went to frozen section and bought big bags of frozen corn for $8. I’m adding peppers in mine to add great mexi-flavor. So I ended up paying $8 for big bags frozen corn and got 18 jars oh home canned corn verses $2.97 a can. Thank you a million!! Winning the war against inflation.

Thank you so much for the work you do to share with us all. You are so obviously a great teacher! Your students were and are blessed to have you teach us. I’m going back into time watch all of your videos and I’m delighted with each and every one. I’m so brave now that I purchased a Presto pressure canner, Weck jars because I can get them, and still on the look out for wide mouth 24oz canning jars. Blessing to you and your hubby for sharing your knowledge and hard work. 💖

I wish I could spend just 1 day with you! I did not appreciate the art of canning my mom tried to teach me. Always told her next time. Now, I don't get. Next time as covid took her. I appreciate all of your videos more than you know! Found you on a whim and I'm glad I did!!

I love your comment about plastic not being invented yet! When I started canning, that nifty magnetic lid lifter thing was unknown. I couldn't bring myself to buy one of those lid holder things, so I used some tongs or a fork and hoped I didn't burn my fingers. When that magnetic lid lifter made it to the stores, I thought I'd died and gone to heaven! Remember that? Now, of course, we don't even need to boil or heat our lids. I will admit that I still wash and then submerge my lids in hot water. Some habits are easier to break than others, and it keeps all of my lids safely in one place while I'm filling the jars.

I am a recent canner (of any sort) and have learned so much by watching your videos. I recently purchased a Nesco digital canner and am using it almost ever other day now. The one thing that I did not see you remark about is the taste of the pressure canned frozen corn. I too grew up on fresh and frozen veggies and so I am particularly interested in whether or not you found the pressure canned corn at least better in taste than the store bought canned corn. Lynn

Did this and also frozen peas, came out great. Saves space in feeezer, and do in quarts, i have big family

I never thought of frozen peas 😊 but it would save so much space in my freezer. I use frozen for my veg soup.

I was just thinking of going to a you pick ‘‘em farm for corn but this is way simpler! Thank you so much, I was not looking forward to the mess and since I’m a small batch canner, this will be perfect! 😍

I'm so glad it turned out well! I'm living in a camper right now and my freezer is about the size of a shoebox. I've wondered about doing this with frozen vegetables but was hesitant. Not anymore! Thank you!!

I actually checked your videos this week thinking I may have missed something and was hoping all was well with you and yours. Glad to see today’s post. Also agree about using a knife. If the glass was that fragile, I’m not sure how it would withstand canning.

I'm glad you mentioned about if the grid goes down, or if your freezer dies, then you won't have food go back if you can it up quickly. Other wise it becomes excellent chicken feed.

Amazing! You had a symphony of beautiful sounds-outdoor winds and chimes with pings of a tiny drum as the jars sealed. How glorious! 😊😊😊 By the way, I wouldn’t dream of second guessing you on anything with all of your experience! I will share a tip for those concerned about the debubbling with a knife which I have watched others do resulting in no issues. I use a table knife as it results in no waste. That said, I’ve seen people use bamboo skewers as well. Just a thought. Blessings

Thank you for your kind concern. We are well and have escaped the virus so far, thankfully. We had a killer summer with our university attempting to prepare for students coming back to campus this fall. But things have finally settled down for us and we are back!

Thanks for this idea! I canned a batch of creamed corn that I creamed using the wooden creamer/cutter. I’m not happy with how it looks but I haven’t opened a jar to try it yet. lol I will now can and dehydrate some frozen corn!

I have never done creamed corn--it is not a family favorite. But we do love frozen corn. The corn in this video is about equal the the canned corn you buy in the grocery stores, so it is ok. Thank you for your comments.

Years ago I canned corn and it turned golden yellow and tasted "canny". I have frozen corn since. I want to can corn this year. Did you taste the corn since you canned it and did you like it????

To de bubble I like to use a wooden chopstick you get from the fast food restaurant. Works well and I have a drawer full of them. 😆We like Chinese take out.

We had quit eating corn. I absolutely love corn but was not going to eat the nasty corn out there today. Until Costco, they have organic, non-GMO frozen corn. Now we eat corn again. I'll buy a few bags, thaw wash and then can it and it is absolutely delicious.

You have to assume your food storage will need to be without power. Once the power goes out, you will not have the time or the electrical energy to dehydrate or do any kind of canning of your frozen foods. You should dehydrate, freeze dry, or can everything intended for long term storage.

HI Pam, Not sure if you are aware, but plastic lids are made for Weck Jars. Years ago, when I bought a few Weck Jars, they actually came with the plastic lid in addition to the glass. Amazon has them. Thanks! Katy

I apologize for all my comments recently, I'm really not a pest normally, but I found your channel to be incredibly informative, educational, and well done, so you have me hooked. My question is that you canned this corn in late Aug, have you had a chance to try any a month later, and how did it taste? I just bought a lot of bagged frozen corn at Sam's to make this recipe, so I hope it turns out. Some of the corn I will use to make a corn relish that I found in the Ball book...hope that turns out okay as well. Thanks for the videos, I know it's not easy to be a content creator..it's time consuming for certain. Both you and Jim keep up the good work!!!

I bought 40 dozen ears of corn this year from a gentleman that sells the best corn in my town. I always and forever have frozen my corn and cut it off. When I saw this video I thought to myself I’m getting an age to where I can’t do the garden either and my daughter made me a raised bed which is the same thing my hands don’t work that way. I am right now as of this minute canning frozen corn from the store. I’ve done next vegetables identity it is amazing the best thing that you ever showed us. Thank you for your information

Thanks...it is good to be back! Our favorite is still frozen corn. I just opened a jar of the batch we did today to give it a taste test, and it is about like canned corn--not bad at all!

Thank you for this video! I have very limited freezer space (bottom freezer with a French door refrigerator) and chose not to replace my dead chest freezer at this time. This will help free up freezer space in time for fresh produce coming in soon! Would this process also work with other frozen veggies, such as green peas? I hope y'all are doing well!

Why can frozen corn? For me a one word answer: Convenience! When I'm tired at the end of the day, I can simply pop the lid and into the microwave for a bit (or not - I like it cold sometimes), and I'm ready eat. Plus, it is good. Thanks!

I am so glad I found you again 🥰 I had always believed that corn had very little nutritional value. If so, does canning it take out any more of the nutrition? If so, does canning any veggies cause loss as well?

The most nutrition comes from fresh, then freeze dried, then dehydrated, and lastly, pressure canning. So yes, some nutrition is lost. But there is enough left to make it worth while, especially in emergency situations when familiar foods will also offer some comfort and stability.

I canned 2 double canner batches of frozen mixed veggies. The next day and the day after they all began to get very cloudy.soon the lids popped off. So then I canned a single batch of 8 pints of mixed veggies. They all turned out perfect.. What on earth happened!? Yes, I threw all the double batches out!!

Another good thing to can is the number 10 cans of fruit. I found the restaurant stores have now started to sell to the general public. I found cases of mixed fruit and peaches 6 cans to a case 36lb each case for 36$ making them 1$ a lb

I am not sure I would do that. You would use water bath processing for that, and cooking the fruit twice would diminish the food value. However, if that works for you, then go for it!

I have a question. Can this be done with frozen pineapple? Not to make jelly, but to can like you would fresh pineapple? Or other frozen fruit, like peaches, that I do not want to use for making jam or jelly? Thank you for all of your wonderful videos!

And I would can it following the guidelines for canning fresh pineapple, of course, the pineapple would be thawed, etc., like you did with the corn....

Hello I’m wondering if one could approach pressure canning frozen field peas with snaps the same way Following the USDA guide lines for fresh The instructions for cooking frozen field peas and snaps take about 30/45 minutes so I’m under the impression they are raw Any thoughts you have time to share would be very appreciated Thank You Cindy

Yes, just thaw them first then treat them as if they are fresh.

I am contemplating canning frozen corn, I am sure now you have tasted the corn much later in the year. Did it still have the good results as fresh corn? There was a sale on frozen corn and I am concerned that fresh corn will be much more expensive this summer. And I want something more shelf stable in case of power outages.

I just processed 5 bottles of frozen corn pressure style.. question, if a jar comes out a little cloudy is that ok, is the bottle still good. Thank you so much. I enjoy listening to your knowledge but I need a lot of help please and thank you .I forgot to put vinegar in the processing water

My big canner is a Presto 23 quart canner and it holds 7 quarts or 18 pints. So glad you like our videos! Thanks.

We still have a number of the jars of our corn use it on a regular basis. It still has good texture and is not mushy. On the other hand, different people have different expectations and tastes. Jim

I have a question. Do you think canning mixed vegetables would yield a good product? I checked the times and there is a 25 minute increase of time between the corn and the carrots, would that ruin the carrots in the mix?

Rose, what other frozen vegetables may I can? I have mixed vegetables, purple-hull peas, green peas, butter beans, etc. that I would like to get out of my freezer. I too am concerned about a grid-down situation. Thank you!

Any of those would work. Check recipes in the USDA guidebook for processing times.

I have tried to pressure can corn twice but both times it came out caramelized? I am at 1300 ft so I used 15lbs. Any suggestions as to what I can try differently. Both times it was corn cut off the cob. I really appreciate any help.

Help!! I was watching your video on canning frozen corn and I missed that you were supposed To Process for 55 minutes. I only processed for 35. The canner was done and dropping temperature to about 220. I just went back and turned it on to Process for another 20 Minutes. Will that work or do I need to throw it out and start over. I have an Instapot max.

Thanks for this & all your wonderful videos. I'm learning so much. I canned frozen corn, and I added about 1/8 tsp of salt to make my hubby happy. My corn had a slightly milky look to it after it was done. Do you know why, or did I do something wrong?

That is great! Some frozen corn does that, but it won't hurt anything. Next time, try a different brand. Sometimes it takes a time or two to find the best brand for what we are trying to do.

I think it's the corn's starch but I'm not 100% certain of that.
